Lime Gelatin Salad I

This has been a tradition at our holiday for years. We leave out the pecans, don't heat the pineapple (our recipe didn't call for that) and sometimes don't whip the cream when short on time. Still turns out great! Oh and an immersion hand blender works beautifully when the jello sets up a little faster than you expected. My husband doesn't like pineapple, so I made him a cherry version. Subbed two 4 oz. boxes of sugar-free black cherry jello, upped the boiling water to 1-1/2 c. and added chopped fresh bing cherries. Yum! Could even add chopped almonds to compliment the cherries. Next? Strawberry-banana walnut? The possibilities are up to you!

Broccoli Crab Bisque

This was quick and easy and I followed the recipe exactly. I used two of Chicken of the Sea lump crab in a pouch (3.5 oz each). Flavor was good, but as with most soups, better next day. I added a little cayenne pepper after tasting. Other than that, this is great on it's own or a great start to your own creation!

Spumoni Chocolate Chip Cookies

These were very good. Nice change to a classic cookie. The red of the cherries and green of the pistachios made them extra pretty for Christmas. Brought them to the family Holiday party where many people complimented them.

Garlicky Appetizer Shrimp Scampi

I was looking for a quick dinner with the shrimp I had on hand. This turned out wonderfully. Unfortunately, it was the one time I did not have shallots (which we love!) on hand, so following a suggestion I used onion. I also added a hint of red pepper. I can't wait to try this with shallots! I may try adding a little white wine too. Probably making this again for New Year's Eve dinner tomorrow night!

Honey-Mustard Chicken Sandwiches

I was looking for a honey mustard sandwich idea we could make ahead for lunches during the work week. This tasted good out of the oven. Reheated for sandwiches, it was just ok. I will make this again, for variety or until I find something better.

Fabulous Beef Tenderloin

Not so fabulous. Made the recipe just as written. I was disappointed since all the reviews were so positive. Nothing magical, just tasted like beef in soy sauce.

Easy Mac and Jack

This was just ok. The sauce tasted good after mixing it up, however, it seemed a little bland after baking. My husband is a fan of both pepper jack cheese and djion mustard. He was surprised dijon was an ingredient as he could not taste it. Easy to make, but will need alot more tweaking to get 5 stars.

Sweet Macaroni Salad

At first, the sauce had a really odd flavor. I did not use the sugar and only 1/2 of the sweetened condensed milk. The next day, however, the flavors did work together and it was very good. I have seen a similar recipe on other sites and I believe they call for using evaporated milk and sugar instead of sweetened condensed and sugar. Makes sense - why else would you put sugar into more sugar and why would almost everyone leave out or cut the sugar/sweetened condensed milk. May try that combo next time. Made it for my daughter's bridal shower today...cross your fingers!

Chicken Noodle Soup II

Very good! Noodles actually came out really nice and tasty - good texture. After tasting a bowl, I added a bay leaf and a little more season salt and pepper.

Barbecued Shredded Beef

Followed the recipe as is (using KC Masterpiece orignal). If you try it, I am sure you will change something to suite your taste. HOWEVER, the cooking technique is awesome; shredded beautifully in 5 hours in the oven. Ingredient-wise, unless you are a HUGE fan, I would drop the liquid smoke and also only use 1 bottle of beer. Two teaspoons is WAY too much. Made it again with 1/2 t. smoke and still just - too much. I would say it actually ruins a good basic recipe. Your BBQ sauce will probably be enough for infusing that smokey flavor. Like others, I drain the liquid and only add back in if I need to adjust the consistency.

Autumn Pot Roast

I have two favorite pot roast recipes, but I was looking for something different. This is a nice change of pace. I got distracted and didn't have time to add the onions and carrots at the end, and it was still very tasty. I had no tomato juice so I used V8 juice. Served it with mashed potatoes and buttered corn. I will make this again.

Gourmet Meatloaf

This was good for something different. I followed the recipe, minus the cilantro, plus chopped fresh mushrooms. If I make this again, I would cut the steak sauce amount in half. I think I can work this into something that would be better to my taste.

Slow-Cooked German Short Ribs

We loved this. Served it over mashed skin-on potatoes. (Next time, spatzle!)Yes, short ribs are fatty and tough cut of beef, but crockpot cooking is perfect for them. With that said, perhaps as a test, I will try adding a few chuck short ribs the next time, less fatty according to http://www.beeffoodservice.com/Cuts/Info.aspx?Code=20. (I have to say, I never actually used beef short ribs before and when I unwrapped my order, I was a little shocked at how much fat seemed to be there! Worried me a little) I did trim some fat off before browning. I also doubled the sauce ingredients. I used a 12 oz bottle of Heinz Chili Sauce and regular white vinegar. However, you really only need half, maybe even a quarter of the sauce at the end to make the gravy. I did use one of those fat-skimming pitchers as others did, and it worked well. These needed all 8 hours on low to fall off the bone. I will make this again.

Mushroom Spinach Salad

I'd say there's more then a hint of BBQ sauce - this recipe basically is BBQ sauce. However, it somehow works! We had it with steak. We're not sure why, but we feel compelled to make it again! Oh and not fans of water chestnuts or jicima, we left that out.

Pumpkin Pancakes with Nutmeg Whipped Cream

Very good, followed the recipe exactly. Whipping cream is a nice touch, but not really neccesary. Second time I made them I used 1 T white sugar and 1 T brown sugar. I also used only 1 cup of whole milk and upped the pumpkin to 1/2 cup. Liked that even better. Next time I will probably throw in the pecans like another reviewer. Yes, it's a keeper.

Chocolate Zucchini Bread I

Not what I was hoping for. I followed the recipe and added some of the suggestions in the reviews, such as grease the pan twice as much as you think you need, add the choc. chips to the flour mixture, and adding sour cream. It stuck to the bottom and had a burnt kind of taste, even though I only baked it 40 minutes. (it was perfectly baked at that point) It looked good. I wanted this to tastesoooooooo good and it was just ok. Need to keep looking or tweaking. Sorry.

BBQ Chicken Sandwiches

I followed the recipe exactly and it gets an ok rating. I think it's the lemon juice/liquid smoke combo which gives it an odd tang. If I make this again, I would substitute good old cider vinegar for the lemon juice. Also, I would definitely NOT add any liquid smoke till the sauce has cooked through a bit and even then, add in by drops/taste. (I simmered it on very low for about 45 minutes). The stated amount of liquid smoke seemed to overpower everything. I ended up doctoring it by adding a tablespoon of cider vinegar and a good squirt of KC Masterpiece. Sorry.

Guacamole

This is excellent. Since cilantro seems to be the love/hate herb for people, I made it without and added a little at a time until it was what I knew my family would like. Also only used the juice of 1/2 lime at first, then added more as needed.

Quick Chick!

This was quick, but not very tasty. I followed the directions exactly as far as ingredients. I used the Heinz Home-Style gravey and while it did get thin, it was easy enough to remove the chicken, and toss in some noodles to cook in the "broth". I may use this again, but I will be adding other ingredients. Might be worth taking a few minutes to read what others have done to make-over this dish!

Cream of Chicken with Wild Rice Soup

This recipe was a great start to what I was looking for. I made it exactly as directed, minus one of the cups of water. After tasting it like others, it was good but needed something more. I added a bay leaf and chopped garlic (about a tablespoon!). I agree that if you have patience, the white sauce will thicken quite a bit. I added it to the soup slowly and at this point, it is a thinner cream soup. I cooked it down for another hour and it got nice and thick. I also added some Marsala wine for one last kick. So my version is Cream of Chicken Marsala with Wild Rice!
