Streusel Coffee Cake

Reviewed: Feb. 21, 2012
This is an awesome recipe just like it is. If you follow the directions to the letter, you cannot go wrong. Two tips - if you enjoy cinnamon, don't hesitate to double the cinnamon to one teaspoon. And consider pouring a small amount of the icing slowly over the cake as soon as you remove it from the pan. The warm cake will absorb the icing, making the flavor a little sweeter. My wife and I absolutely LOVE this recipe. So do her co-workers. You will too. Thanks Jim!

Italian Creme Layer Cake

Reviewed: May 26, 2009
I baked this cake exactly as indicated on the recipe with one exception. I replaced the coconut with 1 teaspoon of coconut flavoring since many members of my family do not care for flake coconut in their recipes. This is one of the top 5 recipes I am asked for. If I take it some where, I am guaranteed requests for the recipe. It is excellent if refrigerated for a while before serving. My recommendation is that you read the recipe in its entirety before you begin to mix. The mixture of ingredients is a bit different from most recipes. Try this recipe - you will love it.

Mom's Best Peanut Brittle

Reviewed: Dec. 5, 2007
I have used this recipe many times. I gently stir the mixture constantly during the final cooking phase to keep the nuts from getting too overdone. For a neat change, use cashews instead of peanuts. My family and friends fight over this stuff when I bring it to a gathering. It is always the first thing to disappear. And break it up into small bite sized pieces. Everyone is going to grab several pieces and it will last longer if it is in smaller pieces.

Yeast Pancakes

Reviewed: Nov. 29, 2007
Very Good! After reading the reviews, I knew I needed to check this recipe out. The pancakes did not taste like bread to me, as a couple of other reviews have noted - they just tasted like a very good pancake. The texture was excellent. I cooked mine on an electric griddle at 275 - that was a good temp to use. I am real perplexed at the review given for this recipe on 1-18-07. I have tried many pancake recipes and this was as good as any I have ever eaten in my kitchen or at a restaurant. I stuck to the recipe and I cannot imagine how anyone could not like these pancakes.

Buttermilk Pancakes II

Reviewed: Nov. 29, 2007
With the high rating, I had to try this pancake. I halved the recipe and it made nine 6" pancakes. If you have an electric griddle, try 275 - that is where mine cooked the best. The pancakes were very good - not perfect, but very good according to my taste. I think this is a four and a half stars recipe.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Sep. 4, 2007
My Mom and I have been baking this exact recipe for over 60 years - they are excellent cookies and everyone always asks for the recipe. If you want to make these cookies absolutely incredible, make a frosting and put it between two cookies. In a mixer combine 1 box of confectioners sugar, 1 tsp of vanilla or almond extract, 1/4 tsp of salt, 3 tbl of melted margerine, and add milk until you get the desired consistency. Be sure the cookies have cooled or the filing will run off. Preparing these cookies this way will make them unfogettable. Be SURE you don't overcook the cookies. Just a tad brown around the edge will do. And place a piece of parchment paper on your cookie sheet before the dough. That way you can just slide them off instead of deforming them when they are done. I promise these will be the best cookies your family ever had. If you don't like raisins as some of my family does, just leave them out. YUM!

Marinated Grilled Shrimp

Reviewed: Jul. 18, 2007
My review will mirror most of the others. This recipe is fantastic. I found that a 2 to 3 minute cook on each side wasn't quite enough so I just cooked mine a little more. That was the only change I made. I tried this recipe over rice (good) and later with a baked potato (EXCELLENT). I will make this dish often - my wife and I love it. I have many grilled shrimp recipes but this one is the best. Many thanks to Rachel for submitting this delicious recipe.

Maria's Pepper Steak

Reviewed: Mar. 30, 2007
EXCELLENT recipe!....and I usualy don't eat many meals with peppers and onions. I feel like a broken record because my review seems to be much like everyone elses. But a few key things became apparent as I prepared and enjoyed this recipe. First, follow the instructions of a few others and cook the veggies first. Set them aside and then cook the beef. Set that aside. Then make the sauce and be sure to DOUBLE it - your family will love you for it.....and yes, it will be sweet, so don't hesitate to cut back on the honey a little. At the advice of others I used sirloin instead of flank...and slice it THIN - OH WOW! This meal took me at least 30 minutes to prep (cutting meat & veggies) and about another 30 minutes to cook. Yes, it is easy to fix but it will take you about an hour to get it ready. And do thicken the sauce a little with corn starch. This is an excellent meal when served over rice. Thanks for this recipe Maria.

Hash Brown Casserole II

Reviewed: Dec. 20, 2006
This is a 5 star recipe - nothing less. I made this recipe a few months substituting 3 tablespoons of minced onion in place of the real onions. Since then I have been asked to make it approximately 20 times. It gets entirely eaten everywhere I take it. Mine seems to be al little better if I increase the cooking time to 50 minutes. Thank you Courtney for submitting this recipe. My family and co-workers love this stuff!
