Peanut Butter Noodles

It was definitely tasty but a little to peanuty. Next time I would reduce the peanut butter and add in some sesame oil and shiraka. I would also use different thinner noodles next time.

South Shore Pork Roast

I really liked this recipe. I made the mistake of not noticing the amount of cooking time involved and started way too late. I modified as follows and it came out very tender. Browned the roast. Put roast only in covered pan in oven at 400 for 15 minutes then at 375 for 15 minutes. Added in the remaining ingredients and cooked for 30 minutes more. Done and perfectly cooked. On the gravy next time I am not adding any water it was way thin. Flavor was very yummy but I think the amount might be a misprint plus the way I made it there was a lot of juice in the pan. Also next time would salt/pepper the roast prior to browning - needed just a tad more flavor.

Avocado Shrimp Bisque

This combination of shrimp and avocado was great! I used uncooked shrimp instead and incorporated some S. TX necessities. I cooked whole shrimp in the chicken broth along with diced onion, garlic, celery, red pepper and 1 habanero pepper (seeded). I removed the shrimp when cooked and set aside and diced. I then added the whole milk and brought the temp up slowly cooking the the veggies. I then added the diced avocado (more than called for) and shrimp and used the stand up hand mixer in the pot itself to puree about half of the ingredients. I added in the following spices along the way: Salt, Pepper, Old Bay Seasoning and Cumin to taste. I also added in a dollop of sour cream and minced cilantro to the bowls. Yummy!!! Boyfriend was dubious of the combination but LOVED it!

Salmon Croquettes

Very good recipe - substituted diced red pepper for celery. Used 1/2 wheat germ and 1/2 bread crumbs - flattened and sauteed in 2 tbsp olive oil. Crispy and yummy!
