Minestrone Soup

Yum! I left out the potatoes and spinach and added more chard. Super yummy thought as left overs I had to add water to thin it out. The pasta absorbed most of the liquid. Great basic recipe. Thumbs up.

Spinach Bread

I used bread flour instead of all purp and fresh spinach instead of frozen. My loaf rose beautifully and was so delish. At first I thought it might be bland but we all really enjoyed the simplicity of the bread. I served it with a minestrone soup recipe from here and it was a big hit. I think next time I might up the spinach and cheddar content.

Cinnamon Rolls II

I was super nervous to try these being a cinnamon roll virgin but they were delectable! I only used about 1/2 cup of all purpose flour then subbed bread flour for the rest. I added an extra pinch of cinnamon to the dough while the bread machine was on. Doubled the amt of filling and melted the butter to brush it on. Mmmmm! I put them together to heat up on Christmas morning but they looked so good that we ended up having them for Christmas Eve dinner! My 4 yr old son deemed me best Mom EVER! These were fluffy and exactly what I wanted them to be. Can't wait to make them for my Mom when she comes to town.

Whole Wheat Banana Nut Bread

I made these as muffins and baked them for about 22 minutes. I did tweak the recipe a little. I used 1/2 cup white whole wheat flour and the rest regular whole wheat, added 2T coconut oil and about 2 T vanilla yogurt. I also added choc chips to 1/2 the muffins. The texture is good but the flavor is lacking. I think I'll work on making this a little more yummy as it was easy to make. Maybe I'll add brown sugar and more bananas next time? I drizzled a still warm one with orange honey and it was pretty tasty.

Mediterranean Baked Fish

Made this a few nights ago and used tilapia since roughy is on the not safe list that I have. Hubby LOVED it, said the combo of flavors was perfect. I think I'll try a different fish next time. Served with sauteed spinach and mushrooms. Yum!

Crunchy Honey Wheat Bread

YUM! I changed this only slightly and it came out prefect. The 3 of us ate half a loaf at dinner last night. I used 2 T coconut oil instead of vegetable oil and used 2.5 teaspoons of yeast (per my machine's rapid wheat cycle instructions). So good. Very flavorful, nice crust and fluffy inside. Can't wait to eat some as toast in the morning!

Oatmeal Bread II

Oh man was this good! Made it tonight and we went thru half the loaf at dinner! I used 2 T coconut oil instead of margarine per another reviewers advice. Yum! It was SO fluffy and delish on the inside and crusty on the outside. I only used 2.5 ts of yeast per my bread machine's rapid white bread 1.5 lb loaf cycle and it was perfect! This is on our short list for sure.

Concord Grape Pie II

I'm giving it a 4 only because preparing the grapes were a pain in the butt! The results were amazing though. DELISH! Just had a giant piece for lunch with some cold milk. I think 1 cup of sugar is WAY too much and I'm happy I only used 1/2 cup. Perfect mix of tart and sweet, has a cherry pie texture. I also used whole wheat pastry flour in place of white flour. Those are the only changes I made. Thanks for sharing.

Crispy Rhubarb Pie

I didn't have enough rhubarb so I added about a cup of strawberries to the mix. Used a pre-made crust from Trader Joe's and added extra crispy topping. MAN was this good. I'm usually not a pie lover but this was amazing. We ate almost half the pie when it came out the oven. Will make again and again. So simple and delish!

Carrot and Fennel

Yummy! I omitted the fennel seeds and added a little garam masala spice. I didn't have any heavy cream so I used milk and butter instead. Lovely flavor but I think next time I'll use some coconut milk in place of the cream. Hubby really enjoyed it as well. Thanks for this one!

Garden Tomato Salsa

I used 6 tomatoes but took the juice and pulp out of 3 before adding them to the food processor, subbed 2 jalapenos for the pickled slices (NOTE TO SELF--wear gloves next time...jalapeno oil burns like heck!), added extra cilantro, garlic, sea salt and a bit of tapatio hot sauce. MMMMMMMM! This stuff was super yum!

Tilapia Soft Tacos with Chipotle Cream

Medium high is waaaayyy too high on my stove to cook this. I hardly had the burner turned up to medium and the cilantro/garlic/spice mixture was burnt to a crisp. :( I added new oil to the pan after I chucked the burnt stuff, added the fish and seasoned with adobo seasoning. Fish was yummy. I served with purple cabbage, jalapeno cheddar tortillas, 1/2 spinach/1/2 spring salad mix and the results were yummy. I also blended the sour cream and peppers in the blender to make a creamy sauce. Hubby ate 2 huge helpings. All in all a great recipe...just watch the heat!

Banana Oatmeal Bread

It's a sad thing to watch a 34 year old woman give herself a stomach ache from eating 6 mini muffins and a small slice of this bread when it came out the oven. MAN is this some good stuff! Hubby ate some and said it's one of my finest breads to date. I subbed 1/2 cup applesauce and 1/2 cup butter for the shortening, omitted the raisins and added some walnuts and a few chocolate chips. DIVINE! It doesn't rise much but who cares! I'm soooo making this again. Soon...like probably tomorrow!

Black and Blueberry Muffins

I'm sad I used our yummy berries from the farmer's market for these. They are missing something..the berries alone aren't enough to carry the muffins. I even added a teaspoon of vanilla but it didn't help. :(

Zucchini Carrot Muffins

I gave this a 4 only because it's a tad on the too sweet side for my taste.I know that's from the carrot cake mix though. This recipe was SUPER easy. I added walnuts instead of pecans and the muffins were yummy. I also had to cook about 5 minutes longer than suggest but that's normal with this type of batter. My 22 month old has been gobbling these up. I made a tin of mini muffins just for him. He eats them and says "mmmmmm..nummy" so that's a big thumbs up from us both!

Cheesy Baked Eggplant

I made this last night and it was wonderful! I may even eat some of the leftovers which is rare! I made a few minor changes. I added a layer of shredded Gruyere cheese just because I needed to use some up, added 1 cup of pasta sauce, made my own seasoning blend and added extra parm and mozz cheese on top. So yummy! Thanks.

Mom's Zucchini Bread

YUMMY! I've made this 2 times in the past 2 weeks. I did tweak it a little using the advice of other reviewers. I used 1 1/2 cups brown sugar instead of the amount stated in the recipe, I use 1/2 cup unsweetened applesauce in place of 1/2 the oil and used unbleached flour. My 19 month old gobbles this up and I just watch with a sneaky smile thrilled that he's eating some veggies! I will make this over and over I'm sure.

Apple Breakfast Bread

YUM! I made this a few days ago and hubby, our 18 month old and I LOVE it! I tried to call our neighbor to give her half the loaf but she wasn't home. Now I'm glad we kept the whole thing for ourselves! Mine turned out slightly dry but still very tasty. I used 1/2 cup brown sugar and 1/2 cup organic sugar. I also used natural unbleached flour. I added a bit of ground cardamom and some extra cinnamon. Mmmmmmmm!
