Spinach Bread
I used bread flour instead of all purp and fresh spinach instead of frozen. My loaf rose beautifully and was so delish. At first I thought it might be bland but we all really enjoyed the simplicity of the bread. I served it with a minestrone soup recipe from here and it was a big hit. I think next time I might up the spinach and cheddar content.

Cinnamon Rolls II
I was super nervous to try these being a cinnamon roll virgin but they were delectable! I only used about 1/2 cup of all purpose flour then subbed bread flour for the rest. I added an extra pinch of cinnamon to the dough while the bread machine was on. Doubled the amt of filling and melted the butter to brush it on. Mmmmm! I put them together to heat up on Christmas morning but they looked so good that we ended up having them for Christmas Eve dinner! My 4 yr old son deemed me best Mom EVER! These were fluffy and exactly what I wanted them to be. Can't wait to make them for my Mom when she comes to town.

Whole Wheat Banana Nut Bread
I made these as muffins and baked them for about 22 minutes. I did tweak the recipe a little. I used 1/2 cup white whole wheat flour and the rest regular whole wheat, added 2T coconut oil and about 2 T vanilla yogurt. I also added choc chips to 1/2 the muffins. The texture is good but the flavor is lacking. I think I'll work on making this a little more yummy as it was easy to make. Maybe I'll add brown sugar and more bananas next time? I drizzled a still warm one with orange honey and it was pretty tasty.
