Quick and Easy Mexican Chicken
Really yummy and in my opinion, a great deal of the flavor comes from using a good salsa. I use Frontera salsas which adds a smokiness and deeper flavor. Seasoned the chix as told: (generously with) cumin, pepper, garlic powder, (omitted salt) and added a bit of chili powder. Easy, hearty and family crowd pleaser.

Sweet, Sticky and Spicy Chicken
Delicious..reminiscent of General Tso's chicken but without breading and prob a bit "healthier". The chicken is not sticky, more of a thick glaze. I was low on soy sauce so added about 1 tbsp hoisin to make up for it and I think it made a tangy addition. Dredged chicken in flour before browning on hight heat in EVOO. Served with quinoa and green beans with walnuts. Yummy!

Grilled Salmon I
Yum! Olive oil instead of veg oil, marinated for about 45 min. Grill needed no spray, salmon did not stick at all even without skin. Sweet, savory, easy. Great for any weeknight or for guests. I brought remaining marinade to boil and pour spoonfuls over fillets and veggies.
