Burrito Pie

I used crumbled tortilla chips in place since it was what I had on hand. I also used whole beans, just what I prefer. This was a great dish and seemed even tastier the next day. Next time I'll use ground turkey or shredded chicken as a variation.

Clone of a Cinnabon

I had a little trouble with my dough rising. My over was being used when I needed it to rise. It still tasted wonderful, but just not light and fluffy rolls. I will try again

Beef Tenderloin With Roasted Shallots

Served for x-mas dinner and I use my meat thermometer to determine the baking time. The roasted shallot sauce was wonderful. I will look for a less expensive cut of meat next time.

Good Old Fashioned Pancakes

We make pancakes several times a month, so I make them as healthy as possible for my family. I use half wheat & half white flour, add a tsp of flax seed meal, substitute oil/butter with applesause and add 1 tsp of vanilla extract. Its still easy enough, my husband even makes this recipe on my mornings to sleep in.

I tried making this in the crock pot and it was overflowing. Pretty good, but it needed some extra seasoning. I'm not a salt user, but I added quite a bit to bring out the flavor. It still seemed like it needed something more.

To Die For Blueberry Muffins

These were outstandaing and I did several things to make them healthier for my family. First, I did 1/2 whole wheat flour (my husband couldn't tell), I added ~1tsp of ground Flaxseed Meal for added Omega 3's, and I replaced the oil with califlower puree (you can always just use applesauce). I tried the given topping and threw it out. I then used the other suggestion listed. I plan to do raw sugar on top next time like my favorite bakery does.

Perfect Turkey

This is the first time I've brined (sp)a turkey. My bird was huge, so I had to buy a 5 gallon bucket to soak the turkey in overnight. I was also worried about how much salt was used to brine the turkey, but it washed off and didn't taste salty to me. It was very moist.

Slow Cooker Stuffing

This is how I will always cook my stuffing using the crockpot. It freed up my oven space and was so easy. I made my own bread crumbs in the oven using sourdough bread the day before and prepared the veggies too. Then just dumped it all in the day of and it was so much better than my mother-in-laws (which took her forever to make)...he-he:>

Beth's Spicy Oatmeal Raisin Cookies

This was the perfect oatmeal raisin cookie. I made a batch w/ chocolate chips for my husband who dislikes raisins, but I only added 1/2 the amount of ground cloves to the batter. I wasn't sure if the strong clove taste (which is great w/ raisins) would be good w/ chocolate.

Slow-Cooker Chicken Tortilla Soup

I used frozen chicken breasts and took out to shred during the final hour. It was perfect and so easy. I'm making it again this weekend for a family party. Good, easy comfort food.

Peanut Butter Chip Chocolate Cookies

I made these for a cookie exchange and they were awesome. I think the quantity is off, I wanted to make 36 and it told me I needed 6 cubes of butter! So I just did half and it made a ton of cookies.

Chocolate Trifle

Added the french vanilla to the whipping cream, carmel and toffee bits as suggested by other readers. This was really good but it was almost too rich (if that is possible). I'd like to lighten up the whipping cream and pudding layer next time.

Raspberry and Almond Shortbread Thumbprints

Great cookies. I made these and several other cookies last year for a cookie exchange. This is the only recipe I'm re-using this year. I may reduce the almond extract a little as it was very strong.
