Spinach Apple Salad

This salad was delicious!!! I served it at a birthday party and everyone just raved about it! I replaced the raisins with whole red grapes, which added a wonderful flavor. I also offered sliced roasted almonds and bleu cheese crumbles as toppings, and both accent this salad beautfully! I am so glad we found this recipe; it's moving into the weekly dinner rotation for sure!

Chicken Pot Pie VIII

This is delicious! I made it last night and it turned out great; not a crumb left over! I did read the reviews ahead of time and knew to cook the potatoes a bit before adding them. I also added a bag of frozen peas and carrots and skipped the mushrooms. The other reviewers are correct that it makes WAY too much filling for the crust recipe provided, especially if you add extra vegetables. Do yourself a favor and double the dough so you can make two of these yummy pies! In preparation for a birthday party where I'm serving my son's favorite meals as appetizers, I actually made miniature pies in my muffin pans and ended up with six pies. They baked perfectly in the time and temperature for the regular pies and turned out great as cute little individual pies that popped right out onto the platter!

World's Greatest Chewy Chocolate Chip Cookies

These cookies are pretty good when baked as described. They are VERY buttery, so next time I will reduce the butter a little. Also, they definitely need more chocolate chips so I mixed some in the batter and then placed a few more on top. These cookies bake very flat, so be sure to keep your dough balls small and widely spaced, or it will spread too much in the pan and you'll end up with one giant cookie.

Soft Gingerbread Cookies

These are the first gingerbread cookies I've baked, and I was very pleased with the results. The dough was a little difficult to work with, and I found it had to be very cold or it would soften too much and not be easy to cut out. Some of my batches turned out a little crispy so I had to watch the baking time very carefully, or they would over cook. There is a fine line between soft and crunchy with these cookies! The cookies turned out nice when baked properly, though. Nice, soft texture and good flavor. They didn't puff too much and retained their shape very well. We decorated using a butter cream icing and they tasted great! I'm making them again for our Christmas party this weekend.
