Apple Breakfast Bread

MM.. tasty, but needs work. A bit dense for my personal taste. I will take the suggestions of shredding or pureeing the apples. I will also add the 2 tsp oil. Otherwise, good flavor, great baked color and smell.

Becky's Easy Cilantro Lime Rice

I enjoyed the recipe very much; my family ate plenty. The recipe is good as is. However, I did find the rice to be a bit onthe soggy side. I will try a few alterations to see if that helps. First, I will brown the rice a bit before added the other ingredients Also, I will not put the other ingreadients in the food processor, I will just chop small. Lastly, I will have the cilantro at the end to keep the color and flavor fresh.

Layered Eggplant Hamburger Casserole

I gave it a four because it has potential. As is, it's probably a three. I omitted the parsley; it seemed excesive to me. Definately needs salt and pepper. Otherwise, it was a good quick and easy alternative to a more complicated eggplant parm dish. I'll use it again with a couple of mods. Salt & pepper for sure and I'll probably add a few red pepper flakes because we like a little heat in our food.

Bacon-y Bok Choy

Easy peasy.. I used a small bok choy variety called mei quing choy I had on hand from my CSA delivery. I also added chiken breast cubes to add bulk. Served over rice. Great meal.

Green Cabbage Caldo Verde

Very easy to make. I stuck to the recipe. Next time I plan to incorporate chicken broth into the required liqid. I think It might provide more depth of flavor. I also might try added carrtos as suggested in another review. I substituted linguisa for the chourico as I could not locate that particular sausage. I also need to add more salt. Not quitre enough for my personal taste. Loved it though. Everyone ate it up.

Chicken and Tomato Stew with Arugula and Cannellini

I really enjoyed the recipe. I didn't use the wine. Also, I added extra pepper flake because we really like them. Otherwise held to the recipe. Everyone really enjoyed. Will definately make again.

Downeast Maine Pumpkin Bread

Great, easy recipe. The finish product was super moist. I took two loaves to work. They are a picky crew, but they all came back for seconds and thirds of this one. I didn't deviate from the recipe, but I think I would like to add a crumb-like topping for added pazzazz.
