Lentil Soup

Awesome recipe! I did use the lemon juice instead of vinegar, also added double the amount of tomato but that's just because I'm a tomato-ey person :) Turned out great and the kids loved it!

Honey Mustard BBQ Pork Chops

Put it in the crock pot on high for 3 hours and then on low for about 2 and it was amazing. Didn't marinate at all. Great recipe.

Fresh Ginger Cookies

I used two teaspoons of ginger instead of fresh ginger and they turned out great. It was kind of weird that some ended up very flat and others very puffed (in the same pan), I think I will mix it more next time.

Grandma's Egg Custard Pie

I confess, I am the horrible reviewer who did not follow the recipe yet is rating it. I am only doing it for the sake of everyone out there who needs to know the results of the changes though. Just so you know, I hate it when people do this. I used a can of coconut milk, a can of evaporated milk and stevia. Turned out great! Couldn't even taste the coconut milk, which is what I was hoping for.

Apple Pie Muffins

I attempted to make these as a bread and it didn't quite work out. It lacked the structure to stay together. The flavor was fantastic though and I think as a muffin it would have held fine. Other than the change in pan I followed the recipe to a T.

Drop Biscuits and Gravy

Haven't tried the gravy, but I make the biscuits all the time with my Grandpa's gravy recipe. LOVE THE SIMPLICITY OF THE BISCUITS!!!!!

Firecracker Grilled Alaska Salmon

Absolutely fabulous! I used Halibut and marinated about 5 hours then cooked on a piece of foil on the grill. I also threw a piece of chicken in with the marinade and it turned out fabulous as well. Will use again with chicken, fish or pork chops!

Rosemary Herb Bread

I dipped this bread in olive oil with some italian spices in it and it was AMAZING. Didn't have the fresh spices so I added half teaspoon extra of the rosemary for a little extra zing. Also, added 1/2 tablespoon extra of butter, didn't use margarine, just 2 T of butter. Excellent!

Zucchini/Potato Soup

I added carrots to this and omitted the lemon juice and eggs. Also, chopped onion instead of sliced for ease on a spoon. Turned out fabulous! Served with Rosemary Herb Bread also on this site.

Bacon-Wrapped Asparagus

Didn't grill it, just broiled it at 500 for about 15 minutes (until bacon was crispy). Pretty good. Just spun the bacon around it then rolled it to get the underside about 10 minutes into cooking.

Michael's Foccacia Bread

Caution!!! Makes a HUGE loaf. Use the pan size recommended or half the recipe. This loaf is more about 20 servings. It is DELICIOUS and I am making it again tonight as written (but halved). The onion is good and cooks fine in there so go ahead and add it, finely chopped.

Shrimp Scampi Bake

Really liked it. I didn't think I would but I've been trying to expand my menu and was really impressed. In addition to ingredients, I added about 1 cup of asparagus, left out 1/2 of the shrimp and served over noodles. Used frozen shrimp (thawed).

Curried Squash Soup

I have made this for 2 or 3 parties and it has always gone over very well. I use the coconut milk for 2 cups of the broth and olive oil instead of veg oil. I omit the salt and use cilantro for the topping with sour cream and whipping cream.

Corn and Crab Bisque

I followed the recipe almost exactly. I didn't have half and half or any heavy cream. So, I added about 3 Tablespoons of cream cheese and WOW! It was super good, but maybe a little too thick so I would use a little less cream cheese next time. I added it to the food processor.

Sausage Egg Squares

Made this "unhealthy" because that's the way I cook :) 7 large eggs instead of 1 1/2 cup of substitute, pork sausage (one pack of breakfast sausages, casing removed). Turned out great. Served it at my 3 year old's birthday. One without peppers and one with. Side note: 16 oz of Cottage Cheese equaled 2 cups.

Cake Mix Cookies IV

Very sweet. I was in the mood for something very sweet but it was almost too sweet. I used white cake, a box of vanilla instant pudding and about 1/3 cup of oatmeal. I also added 1/3 bag mini chocolate chips which added to the too sweet aspect. Balled them and flattened as you would with a peanutbutter cookie. Stuck a whole walnut on top because I like walnuts but the family doesn't. Very good. Very sweet, I would cut back the chocolate chips or just add nuts next time.

Continental Rice

I changed this up a bit to accomodate what I had but I am grading it based on what is here. The basil added a nice touch and the butter made for a creamy texture. Loved it. (I used regular brown rice, fresh mushrooms, 1/2 c onion, once stick of celery, mixed veggies and bouillion cubes. It was FABULOUS. Sauteed the onion and garlic first. Added and sauteed basil and celery. Added water and cubes, brought to boil and added rice. When rice was just short of being done added mushrooms and frzn veggies and cooked until done.)
