Sausage Egg Squares

Made this "unhealthy" because that's the way I cook :) 7 large eggs instead of 1 1/2 cup of substitute, pork sausage (one pack of breakfast sausages, casing removed). Turned out great. Served it at my 3 year old's birthday. One without peppers and one with. Side note: 16 oz of Cottage Cheese equaled 2 cups.

Bacon-Wrapped Asparagus

Didn't grill it, just broiled it at 500 for about 15 minutes (until bacon was crispy). Pretty good. Just spun the bacon around it then rolled it to get the underside about 10 minutes into cooking.

Continental Rice

I changed this up a bit to accomodate what I had but I am grading it based on what is here. The basil added a nice touch and the butter made for a creamy texture. Loved it. (I used regular brown rice, fresh mushrooms, 1/2 c onion, once stick of celery, mixed veggies and bouillion cubes. It was FABULOUS. Sauteed the onion and garlic first. Added and sauteed basil and celery. Added water and cubes, brought to boil and added rice. When rice was just short of being done added mushrooms and frzn veggies and cooked until done.)

Zucchini/Potato Soup

I added carrots to this and omitted the lemon juice and eggs. Also, chopped onion instead of sliced for ease on a spoon. Turned out fabulous! Served with Rosemary Herb Bread also on this site.

Pork & Pineapple Stir-Fry

Pretty much amazing! I made this for some company, so total there were four of us. I doubled the recipe so I could have the left overs for lunch today but it was completely gone yesterday!

Raisin Oatmeal Cookies

Just made these and loved them. I changed a few things though. I used whole wheat flour, used a 1/4 cup of flax, 1/4 cup butter instead of shortening, 1/4 cup of sweetened applesauce, 1 teaspoon of almond. I also plumped my raisins first. So maybe it's not the same recipe anymore...but it was amazing!

Honey Mustard BBQ Pork Chops

Put it in the crock pot on high for 3 hours and then on low for about 2 and it was amazing. Didn't marinate at all. Great recipe.

Deep Dish Brownies

Not a fan of making homemade brownies since they are usually a little tedious to make. This went quick with a FANTASTIC result. I did use a dark pan and reduced the temp to 325 for 26 mins. Great recipe.

Raspberry Trifle

I give this four because I think there is room for improvement but overall a GREAT recipe. I used two low fat cream cheese and a mascarpone cheese. Also, the pound cake freshly baked is a much better idea, it only takes a few minutes to mix it and it's worth the time. Made mine with 3 tubs of frozen strawberries and then used freshly sliced strawberries on top for decoration. I left the sugar as it stated since there was already additional sugar in frozen strawberries. (I would have used raspberries but strawberries are much cheaper here!)

Honey Coconut Salmon

The flavors just did not mesh well. The thought was good. The butter was WAY too much even at 1/2 cup, which is what I reduced it to. The cooking time seemed about right to me with a quick shot under the broiler to crisp it up. I love coconut but I think in this case it would be better without it. Just use the glaze and it might be a 4 star.

Brown Jug Soup

My kiddos (5, 3 and 2) love this soup and so does hubby. I did sautee my onions and celery with one clove of garlic before adding it to the soup. I also added a bay leaf while it simmered. I did not use the broccoli instead I used two 12oz bags of mixed veggies. I would have given it 5 without these changes but for personal preference will do it the same next time as well.

Corn and Crab Bisque

I followed the recipe almost exactly. I didn't have half and half or any heavy cream. So, I added about 3 Tablespoons of cream cheese and WOW! It was super good, but maybe a little too thick so I would use a little less cream cheese next time. I added it to the food processor.

Grandma's Peach French Toast

I used regular oatmeal flavored sandwich bread ripped up (7 slices) on top of this. It turned out VERY good as far as the bread goes. I also used frozen peaches. Next time I would thaw them in a strainer as this time it diluted my caramel layer. I only give it four stars because as far as quantity of peaches it did need more. I think I might try diced peaches next time to make it feel like there is more.

Wow! I really loved this. I did omit the oil though. It did get a little thick the next day so I dipped, more like scooped the soup up on garlic bread. That was really good. I added halved baby carrots for a little color and texture. They were great in there! My kids (2 and 1) loved it as well.

Banana Sour Cream Bread

I would give this 5 but that's so deceitful when the recipe has the incorrect temperature. That's a pretty big deal. With a 325 oven it's a 5 star but if you cook it too low it's a 1 :) I omit the walnuts because the kids don't like them and swap in some mini-chocoalte chips sprinkled in and on top of the loaf. Yum! Also, it taste just about the same with half the sugar when you add the chocolate chips. Other changes: I use coconut oil since I like the flavor it gives. I use plain full-fat yogurt instead of sour cream.

Grandma's Egg Custard Pie

I confess, I am the horrible reviewer who did not follow the recipe yet is rating it. I am only doing it for the sake of everyone out there who needs to know the results of the changes though. Just so you know, I hate it when people do this. I used a can of coconut milk, a can of evaporated milk and stevia. Turned out great! Couldn't even taste the coconut milk, which is what I was hoping for.

Bran Flax Muffins

This was way short on cinnamon, 1 1/2 T would have been MUCH better. It was good, nice texture. I added 4 apples for a total of about 2 cups of apple. Seemed just right. Used 3/4 cup whole wheat and 3/4 all purpose flour. Also tossed in about 1/2 cup of chocolate chips since I will be feeding the to the kids :) I was going to toss in coconut but forgot, would have been really good in there too! The oil could have been completely omitted as well. Great recipe with some room for improvement.
