Apple Squares

this was a simple (yes, even with the ingredient list that looks long) recipe that came out moist, spicy and delicious. i increased the amount of apples (i may play with the recipe a little more to up the apples and lower the sugars) and doubled the cinnamon. it's a winner.

Raw Apple Cake

a pretty good fresh apple cake. i upped all of the spices and added a few more, to make it more of a spice cake rich with apples. i also left off the cream cheese frosting; to me that would have been overkill. a simple dusting of confectioners sugar is all that it needs.

Broccoli Quiche with Mashed Potato Crust

this was a decent and fairly quick weeknight recipe. i already had mashed potatoes on hand along with some fresh broccoli, so it came together quickly and was relatively tasty. i added garlic, along with a mixture of cheeses (cheddar, provolone, romano - again, what i had on hand), and baked it in a small casserole dish instead of the pie pan. i would make it again.

Homemade Black Bean Veggie Burgers

not quite sure about the other reviews because these were a tremendous hit - as-is. normally i make all sorts of changes/additions/deletions to recipes, but didn't here. and they were really a winner. i had no problem with them sticking to the cookie sheet, and the flavor was excellent. i made them smaller (ended up with 6), and served them with a "dipping sauce" of 1/2 salsa mixed with 1/2 sour cream. delicious.

Homesteader Cornbread

I've got to agree with the previous 2 reviews - the texture of this cornbread wasn't good. Very rubbery, with a not-quite-done feeling to it, even after the prescribed baking time.

Italian Riboletta Soup

this soup came out very thick - more the consistency of bean and vegetable stew - and had very little flavor. i tried spicing it up with herbs and spices but it still was pretty blah. i didn't necessarily expect the riboletta i had while travelling through italy, but hoped for at least a good vegetable-bean soup. not here.

Triple Berry Crisp

i've made lots of mixed-fruit crisps over the years, and tried this recipe because of the new and interesting way to layer the fruit between crisp on the bottom and crisp sprinkled on top. a great idea, and it really mixed the flavors throughout. a couple of changes i made to the recipe, however --- i used a combo of fresh peaches and blueberries because that's what i had on hand. i did not add sugar to the fruit as it says to do in step 2; seemed unnecessary and it worked fine without. also - 1 1/2 cups of butter?!?! insane - i used half of that amount and it still was buttery and crumbly. i'll make it again for sure.

Jay's Jerk Chicken

excellent recipe... i made this for a dinner party, marinating the chicken early in the day and grilling later that evening, and received rave reviews all around. just the right notes of heat, spice, salty and sweet. i served it with sweet potato fries and a corn and black bean salad - great combo of flavors, textures and colors. one of the best recipes i've downloaded from this site!

Tex-Mex Pork

Really great, quick, easy recipe. The pork comes out tender and flavorful. I served it with warmed tortillas, shredded cheese, fresh tomatoes and lettuce, and sour cream. Delish. Seems like you can adjust the heat based on the type of barbeque sauce you use. I used a well-known brand that made the sauce sweeter than I would have liked - next time I'll search for a sauce that is low on sugar.

Lemon Bars II

the texture of these bars is great - i like the crumb topping on top and bottom. but the bar is fairly bland - not nearly enough lemon flavor. i think if i made it again, which i'm not sure i would, i'd add lemon zest to the filling mixture.

Connie's Zucchini "Crab" Cakes

This recipe was a great way to use zucchini, and generally tasty too. Two things, however... I'm from Maryland, where we are known for our crabcakes, and this tastes nothing like crabcakes. It tastes like a seasoned zucchini cake, which is fine - but no sweet crab flavor. Secondly, as many had advised, I doubled the amount of Old Bay. Mistake - remember that Old Bay is full of salt in addition to the seafood seasonings, and it made the cakes incredibly salty. Next time I'd keep the Old Bay as is in the recipe, and use some additional non-sodium herbs and/or seasonings.

Easy Soda Cracker Bars

very good, very easy recipe. i made this with nonfat sweetened milk and it still was a verrrry sweet, chewy bar cookie. in the future i think i'd double the cracker layer to cut a bit on the sweetness.
