Atomic Canuck Chili

I've made this four times in two months - everybody loves this chili and it's the best on this website (I've made quite a few chilis! Couple of changes: I add fresh mushrooms instead of canned. I used a few dashes of Franks Red Hot, Worschire Sauce, and liquid smoke. I only use around 1 small jalapeno and I add a bit of cumin (probably around a tablespoon. I left out the carrots because it seems weird in chili. As for the BBQ sauce, I always use Diana BBQ sauce - a Canadian staple that I'm not sure if you can get outside of Canada. Also this works well with less meat and more beans (or even vegetarian). I usually sub one pound of ground meat for tofu, which I lightly pan fry before adding to the chili. This could be easily made vegetarian by omitting the meat completely and adding more cans of beans.

Chlodnik - Cold Polish Beet Soup

Wow! Amazing recipe. Certainty the best borscht I've ever had, hot or cold. This is a great summer soup, very mild and refreshing. My beets didn't take 15 minutes to cook, they took 30. Other than that, this recipe is perfect. I didn't add the hard boiled egg to the mixture. Instead I topped each bowl of soup with the eggs and a bit of sliced dill pickles. SOOOOOO GOOOD!!!!

Savory TMT Sandwich Filling

Awesome vegan spread. Very filing and makes a ton! You can easily get 10+ sandwiches with one batch of this. There's something very creamy and tastes almost like it has eggs or cheese it in. It definitely tastes better the next day. I'll be making this one again!

Snickerdoodles I

Wonderful cookie! Super addictive. I used butter instead of shortening. For some reason some of the cookies puffed up and others went a bit flat (even those on the same cookie sheet), so they were a little uneven in appearance. I can't figure out why, because I mixed them using my powerful stand mixer. Maybe it was because of the butter substitution? Either way, I'll be making these again!

Lasagna Alfredo Roll Ups

This was delicious! It was an easy restaurant quality dish. The stuffing exactly fit in 8 lasagna noodles. Usually these kinds of recipes produce excess stuffing. Next time I would double the spinach mixture and use the full box of noodles. A 9 X 13 pan could of easily fit 16. I used PC blue menu alfredo sauce and low fat ricotta and mozzarella cheese, so calorie wise this one isn't too bad. I'll DEFINITELY make this one again.

Chef John's Caramel Chicken

Wow! This is an AWESOME chicken recipe! I followed this one exactly. Next time I would definitely use low sodium soy sauce. I didn't realize how salty fish sauce is, so that's my only minor complaint. Also, it took at least half an hour of cooking the chicken and the sauce on med-high heat to get it properly caramelized, not 6-7 minutes. This is probably due to the fact that I have an electric stove. I'm sure it would caramelized faster if you have gas. Definitely restaurant quality and I'm looking forward to making some other recipes by Chef John

Fennel in Wine and Honey

This turned out really nice. I probably had to cook the fennel for 1.5 hours to get it really tender. I kept adding a bit of chicken broth to the pan because the broth kept evaporating. This is a very unique way to eat fennel! Thanks

Fennel and Watercress Salad

This salad was delicious! I scaled it down using only one fennel bulb and one bunch of watercress. I ended up eating the entire thing by myself it was that good! The only change was that I added some blue cheese instead of olives for the salty component, and orange pieces instead of cranberries. The blue cheese went really well with the fennel and sweet orange.

Slow Cooker Lasagna

I expected this one to be a total fail but it turned out quite good. I used a lb of turkey sausage that I took out of casings. I browned some onions, mushrooms and eggplant too. For the sauce I used one jar of spaghetti sauce and one jar of diced tomatoes (I like sauce to be a bit chunky). I also pureed some cottage cheese in the food processor in place of the ricotta (it tastes the same in lasagna). I cooked it for two hours on low and one hour on high. The noodles were perfectly cooked, probably because I used the preboil ones. I'll definitely use this method again. It was a great way to make lasagna without heating up the stove!

Vegan Red Lentil Soup

This soup is really nice! I substituted the water for chicken brother and added about a tablespoon of cumin and curry powder (I like it spicy). I also added a bit of chili sauce and the juice of two limes.

Chicken Fettuccini Alfredo

This recipe truly deserves 5 stars! I scaled it down to 4 servings and easily got 6 (it's very rich). I used light cream, but next time I'll just use plain milk. This tastes better than any dish from a restaurant!

Zesty Tomato Soup for One

This was really yummy! I sauteed the onions in a bit of olive oil first in the pan. I added about 4 medium tomatoes and 1 can of V8. I also added a clove of minced garlic, 1 tsp each of sugar, oregano & basil. I cooked it for about 15 minute and then blended it in the pot with my immersion blender. This came out to two giant bowls of soup. What a great way to use up garden tomatoes!

Slow Cooker Pulled Pork

I used the cheap pork butt roast instead of tenderloin. It turned out juicy and tasty. I added Diana sauce instead of BBQ sauce. I definitely wasn't the BEST pulled pork I've ever had, but it was certainty tasty!

Sesame Udon Noodles

Decent recipe but not great. I do agree with the other reviewers that it seemed a bit oily. I probably shouldn't of added the 1/4 of oil (sesame oil would of been just fine). Also a 7 oz package of udon noodles is technically a single 200 gram serving, it doesn't serve 4. I used three 7 oz packages of udon noodles and with the mixed vegetables, the sauce was still a bit greasy. This was totally edible, but I probably wouldn't make this one again.

Best Bread Machine Bread

I used this recipe to test out my new bread maker. It definitely works great! It does taste almost exactly like wonderbread, which for me isn't a good thing. I'm not a fan of white bread. I gave the loaf away and they thought it was great. I wouldn't make it again, but for those who are looking for a simply white bread recipe or are new to having a bread machine, this is it!

Bessy's Zesty Grilled Garlic-Herb Chicken

This was excellent. I marinated two chicken breasts using these ingredients: 1/3 cup of olive oil & 1/3 cup of honey (no sugar used!). I left the spices the same, except I substituted 1/2 tsp of turmeric for saffron (they both add colour, but turmeric is way cheaper!). I let them sit for about 3 hours. I baked them at 425 for 30 minutes. They were moist and delicious! I'll definitely make this one again. If you're baking it, make sure to line the pan with tin foil. The sauce is super sticky!

Blender Hollandaise Sauce

I've made this one twice now. First time a 1/2 recipe, and the second time a full recipe. While the TASTE of this hollandaise is excellent, it's totally runny! It has the consistency of soup. I couldn't seem to get it to thicken up no matter how long I blended it. I guess this one is just too simple to be true!

Slow-Cooked White Chili

This chili was really good. I halved the recipe, but added 2 cans of white kidney beans and 1 can of black beans. I halved the amount of chilies in case it was too hot and added a fresh onion and some garlic. I also added about 1/2 cup of herdez green salsa to the cooker. I didn't see the point of cooking the chicken before hand when it's just going to cook in the slow cooker so I just threw it in. The 1/2 batch easily fit into my 3.5 quart slow cooker. I cooked it on "simmer" (one setting below "low") for 8 hours. The end result was delicious with a bit of heat. I topped it with sour cream and had some garlic bread with it. I would probably decrease the amount of chicken broth next time (probably to only about 1/2 a cup) because it ended up being a bit watery or more soupy . Otherwise this is great! Nice change from traditional "red" chilies!

Fabulous Zucchini Grinders

I followed this exactly to use up some leftover homemade marinara sauce. Definitely toast the buns before you put the sauce on! A crusty french bread holds up better than sausage buns (they go a bit soggy no matter what!).

Kathy's Delicious Whole Slow Cooker Chicken

It's been way too hot to use the oven lately, so I've been making different slow cooker recipe for the past few weeks. This recipe turned out quite well! I followed the recipe exactly. Next time I would definitely marinate the chicken overnight, because the leftover chicken tasted more flavourful the next day. The problem is with slow cooker chicken recipes, is that they don't get crispy and caramalized like they do when when roasted in the oven. The meat is definitely moist and tender though. I would definitely try this again in the oven, when it isn't so hot out.
