Cheesy Ham and Hash Brown Casserole

This was great! You can mix it up too and do chicken and green chilis or anything else you can come up with. I used Pacifica brand "organic cream of mushroom soup" and it came out beautifully. There is a little more soup in those containers than a Campbell's soup can, but the extra moisture did not matter. I did add more ham than it called for to make it heartier. My daughter who does not like ham, loved this so I am making it for a second time in 5 days:)

Chicken Pot Pie IX

This is a staple! I usually make 4x this much and use it as a soup instead of a pie. Quick, easy, delicious, and nutritious. We do gluten free as well by adding some gf flour.

Italian Sausage Soup II

Terrific soup and easy. My family loves it. We leave out the pasta and add more beans. Also have made without the sage because I did not have any and it was still great.

Delicious Ham and Potato Soup

I can't believe that I am disagreeing with so many people but I found this very bland. I even used double the ham. Perhaps a decent base, but it needs something more. I added cheddar cheese to the bowl and that helped a little.

Quinoa and Black Beans

This is fabulous! You must rinse Quinoa very well before cooking it or it will taste awful. Just wanted to warn those who have not cooked with it before. I topped with sliced grilled chicken, shredded lettuce, cheese, and sour cream on the side. It was a big hit and very flavorful. A very healthy dish (if you go light on the dairy)and great for those who are gluten intolerant.

Penne with Spicy Vodka Tomato Cream Sauce

This is terrific! I make it without the sausage and red pepper flakes (too spicy for my little one) and it is a fantastic side dish. I also use whole wheat pasta and this is delicious. You can eat it as a complete dinner with veggies or a salad. This is a staple in our house! Everyone loves it.

Indian Chickpeas

This is a very good "channa masala". I cook the dish a lot longer (until the liquid reduces almost completely and the chick peas are very soft). This just takes more like my favorite Indian restaurants do it. I love Indian food and I am always trying to cook it at home. This is the first success I have had. Some day I will have to get lessons from someone who grew up cooking Indian. Until then, I will have this recipe as one of my staples. Thanks for the delicious and easy recipe!
