Banana Muffins II

I'm throwing out my old recipe and only using this one from now on. Easy and delicious! I added cinnamon, vanilla, and a little molasses. I also substituted Smart Balance Light since my daughter is allergic to dairy. They came out perfect! Thank you for the recipe!

Orange Muffins

Thank you for this awesome recipe which the whole family loved! I substituted raisins for nuts (because it's what I had) and canola oil for butter (because my daughter is lactose intolerant). I also added 1 tsp. cinnamon and 1/4 tsp. cloves for a spiced muffin flavor, and glazed these with honey. I will definitely make these again! Wonderful!!!!!

Grandma's Tomato Soup

This soup was so yummy and easy to make! I will never buy canned tomato soup again! I used a 28-oz. can of whole tomatoes in juice and pureed it. I also omitted the noodles, but kept everything else exactly the same. The whole family loved it! Thanks for the recipe!

Tuna Noodle Casserole from Scratch

OMG! Thank you so much for writing this recipe down! I make it this way all the time, except I use swiss cheese instead of cheddar (just personal preference - cheddar is good too). I also use lactose free dairy ingredients because my daughter is lactose-intolerant and it comes out great!

Corn Dogs

These were the best homemade corndogs I've ever made. The batter stayed on the dog when I dipped them, and when I fried them. It also kept a nice shape while frying and didn't run down the sides. They looked and tasted great! Thank-you!

Absolutely Wonderful! I substituted shortening for lard. The dough was easy to make, rolled out well and I was even able to re-roll the leftover dough from the cut-outs. The amount of spice was perfect! I am going to make these every year!!!!

Granny Kat's Pumpkin Roll

I have tried to make pumpkin roll twice before and both times, the cake broke when I unrolled it. I decided to give it one more try with this recipe AND IT WORKED!!! If I can do it, so can you!!! Use this recipe and you will have wonderful pumpkin roll!!!

Cherry Nut Muffins

Because I changed this recipe, I gave it four stars to be fair to the person who wrote this. I substituted the dried cherries I had, instead of using canned. I could definitely see why these didn't bake well for others: my batter was pretty moist, but because I used dry cherries, they turned out pretty well. Canned cherries would have been way too wet. Overall, pretty good. Thanks!

JIF® Irresistible Peanut Butter Cookies

A good cookie, but a salty aftertaste, and the center was gooey (I guess that's ok if you like that kind of cookie). I recommend reducing the salt to 1/2 tsp. and using 3/4 cup brown sugar +1/2 cup white sugar.

Italian Cream Cheese and Ricotta Cheesecake

I followed the advice of the other bakers and baked it at a lower temperature for longer, wrapped it and placed it in 1 inch of water. There was no cracking, but the cake was too moist. Next time I will try without the water bath. The cake was incredibly tasty. I served it with a blackberry sauce and whipped cream. It was a big hit! I'm only giving it four stars because I prefer a less rich ricotta cheesecake that my husband's grandmother passed down to our family which is simply ricotta, sugar, eggs, and flavorings. The cream cheese and sour cream make this cake very rich. I highly recommend it!

Best Big, Fat, Chewy Chocolate Chip Cookie

This cookie is big and soft, and not all gooey in the middle like some others. I really liked them, but my husband thought they needed to be sweeter. The kids devoured them! The dough was a little drier than most, but maybe that's why they weren't so gooey in the middle. Great cookie!

Florida Strawberry Muffins

These were pretty good, and baked well following the instructions. I would have liked them a little bit sweeter, or with a stronger berry flavor. I will definitely make these again, maybe add an extra 1/4 cup sugar. Thanks for the great recipe!
