About this Cook
I love cooking for other people, but often get lazy when I'm cooking for just myself. I love trying new recipes and experimenting in the kitchen.
My favorite things to cook
Pie, enchiladas, cheesecake, crockpot meals
My favorite family cooking traditions
My family doesn't really have any traditions, since my mom doesn't enjoy cooking very much. So, I'm making up my own along the way.
My cooking triumphs
Making 'Tres Leche Cake' after my parents told me about how much they enjoyed it at a restaurant. They said that it was just as good... and my mom forbid me from making it because she enjoys it too much.
My cooking tragedies
Dropping a just-baked cheesecake with a crushed cookie crust into the crack of my oven door as I was leaving for a friend's wedding. I ate some off the door with a fork and had to leave the rest there until I got home from the wedding.

Fennel Pork Chops
Very simple recipe. It was a good excuse to use some wine that I had left over from another recipe. I must say that fennel seed has become my new favorite herb! I ran out of garlic salt but the meat still had plenty of flavor. When I boxed the leftovers, I put a few more fresh fennel seeds and some of the remaining sauce over the meat. So, we will see how it tastes tomorrow. Simple, quick, doesn't require many ingredients, gives the meat a nice flavor.

Roasted Asparagus and Garlic
I used dried thyme since I didn't have any fresh and diced my garlic cloves. I probably would do 2x as much asparagus next time because there was plenty of flavor to go around! Good thing I'll be working from home tomorrow! Simple recipe, strong flavor, a different way to prepare a vegetable that I sometimes get tired of.

Portuguese Chicken I
I used 3 boneless chicken breasts. After they cooked, I shredded them. The sauce is rich and wonderful! I didn't add salt or pepper (yet). I found the sauce to be very flavorful with the wine and garlic. It was not very thick but was still quite creamy. I may make this again but try to reduce the fat (less butter, alternatives for the heavy cream). It was a great excuse to use the wine and cream from another meal I made a few days ago.
