Roast Beef Tenderloin
I am considered a very good cook, but when I made this beautiful roast it surpassed anything else I've made. My company was raving days later that they had never had beef as delicious or tender and this was. I also didn't have tarragon vinegar so used white whine vinegar and couldn't find dried porchini mushrooms so used a combo of 3 kinds of mushrooms. I will find the correct ingredients next time. I had just sharpened all my knives and felt like a professional butcher following instructions for trimming and tying the roast. Took the roast out at 128 degrees, let it sit for 40 minutes tented....true perfection. Thank you so much Chef John!

Baked Scallops
I made these tonight with a small steak and thought they were wonderful. I rolled them in the butter and bread crumbs as per other reviewers. They were wonderful and sweet. My friends tend to serve scallops wrapped in bacon, no seasoning and they usually end up dried out and salty from the bacon. Can't wait to introduce them to this recipe! Thank you.

Double Tomato Bruschetta
I love this bruschetta recipe! Much better than what you get in most restaurants. I follow exactly as written and everyone loves it. Today I made it for a birthday dinner I am doing for my friend (steak and lobster tails). I added chopped marinated artichokes this time which my favourite little greek restaurant does and it put it right over the top. I didn't think it could get better. I'm glad there are only going to be two of us so we will get lots!!!!
