A Nice Slow-Cooked Pork

Excellent and easy crock pot roast recipe. Using other suggestions, I cut down on the liquid - 2 cups of chicken broth and 1 cup of sherry. Once te roast was finished, I strained the liquid out and thickened it on the stove with cornstarch. This made a flavorful gravy that I served over boiled golden potatoes topped with the pork and veggies. I also added carrots and used four fresh sprigs of rosemary. This recipe is a keeper!

Mediterranean Chicken with Eggplant

This recipe was fantastic. I made a few modifications based on what was in my cabinet, but I am thinking the effect was very similar. Instead of tomato paste and water, I used a cup of spaghetti sauce for 1/3rd of the recipe (2 chicken breasts and one eggplant). After placing the eggplant in the pan, I covered it with a layer of fresh tomatoe slices. I topped this with the chicken, onion, sauce mixture and baked for the recommended time. Delicious and interesting! Thanks!

Kentucky Bourbon Balls

I am a cook, turned holiday baker. An important note for anyone not familiar with making this type of candy (so stating the obvious for you expert candy makers ;) ) the the bourbon creme is easiest blended with your hands. Once you have mixed the nuts in with the very powdery butter/confectioner sugar mixture just start blending with your hands. It forms a nougatvery easily when you do this. This recipe is virtually fool proof and so amazing. Reminds me of my old Kentucky home!

Creamy Chicken and Wild Rice Soup

I added half a package of shredded carrots, about 1.5 cups of chopped celery, 2 bay leaves, and half a package of cooked bacon for added flavor. I also used 1 precooked package of wild rice and added my own seasonings - garlic, parsley, thyme...

Fettuccine Alfredo V

Delicious and amazingly simple. I did not change the basic recipe at all but I did turn down the temperature when I added the cheese. Good quality parmesean is a must. It melted in smoothly and pretty quickly. I added mushrooms, onions, bacon, and pan seared scallops and this became a gourmet meal. Try this recipe; you won"t be disappointed!!

Baked Ziti I

This ziti recipe was incredible. I used 2 layers of light sour cream (1 16 oz.) container and only one jar of spaghetti sauce, but I kept everything else the same. The sour cream adds so much flavor and compliments the spaghetti sauce nicely. I will definitely be making this recipe on a regular basis.

Chicken Noodle Soup I

Wow! This soup is an excellent easy base. I love the simplicity of the recipe. I followed the advice of others and added bullion. Then I seasoned with celery flakes, parsley, oregano, basil, garlic salt, garlic powder, and a couple dashes of curry. The flavor was magnificent. I also increased the onion. The flavors that stand out are the celery flakes, curry, garlic, and onion. Thanks!

Peanut Butter Balls VIII

Grandma's Gnocchi

If you have never made gnocchi, like me, then this is a great starter recipe. Follow the advice of other cooks and make sure your potatoes are mashed to a smooth consistancy or you will have potatoe chunks in your pasta. I used 5 medium to large potatoes and probably about 1.5 to 2 cups of flour. The dough is very sticky but holds together well. When you roll it on the counter, any additional flour that is needed is picked up. As a first time gnocchi maker, it was difficult to know what to look for, but such a pleasure to try. We will definitely be making gnocchi again!

Breaded Parmesan Chicken

Wow! This recipe is fantastic! The coating was incredibly flavorful - restaurant quality. We did a marinara sauce flavored by green peppers, mushroom, and onion and the combination was out of this world.

Garlic Curry Burgers

Really great flavors! I used ground turkey, A1 instead of the steak seasoning, and no evaporated milk and some how went very wrong with this combination. The burger meat was so runny that I had to transfer to a grilling skillet instead of the grill. Maybe the ground turkey is just wetter than ground beef. Still, the flavor was great and a nice change from the norm!

2-Step Garlic Pork Chops

Delicious recipe and so easy! I didn't have milk but sumstituted with water and butter and the recipe was great. The one recommendation I would make is to increase the cream of mushroom soup to two cans. I used three pork chops and 2.5 cups of rice with one can of cream of mushroom soup and it was just right for my fiance and me. Therefore, with 4 cups of rice it may not be saucy enough. I seasoned the porkshops and added thinly slice onions to the garlic and pork chops. These were a great add if you like onions.
