Apple Squares
OMG, I loved this recipe. I did tweak it a bit. I doubled the recipe since I used a 13x9 pan. I read some reviews, and ended up putting 2 cups of apples into the bars. I did at some nutmeg just to have something extra. I also put in around a teaspoon more of vanilla because why not? Lastly, I added almond milk to the recipe. After cooking for around 30 minutes, the bars came out fantastic, and were reminiscent of coffee cake, much to the enjoyment of my family. Also, for the topping, I just played it by sight. I poured a little cinnamon in a bowl and a little more sugar and mixed. After pouring the topping on top, I would make more depending on how covered the top of the dessert was. All in all, it was amazing, and am definitely stashing this recipe away.

Exquisite Yeastless Focaccia
I've been looking forever for a focaccia bread recipe without yeast because I have never really used yeast before. I used the dough recipe to make a dessert focaccia bread stuffed with a plum filling by adding sugar to the dough instead of salt and it turned out wonderful. Will definitely look to this again, and could probably apply this recipe to different dessert pastries by changing the recipe up a little.

Mexican Casserole
My family loved it alot. My dad even ate it before I put it in the oven and loved it. I didn't have cream of mushroom soup so I used sour cream, and it still turned out good. I also used refried beans because I didn't have any ranch-style beans, and used flour tortillas after reading the reviews. I added seasonings like tumeric and the chili powder called for in the recipe since I didn't have any taco seasoning. All in all, it was delicious, and will make it again using cream of mushroom soup and taco seasoning. It's definitely a keeper.
