Grilled Balsamic Peaches

We all loved it.(adults) No cajun but topped with goat cheese. It is very rich, but delish. The kids did not like the peaches grilled let alone the balsamic or cheese.

Mediterranean Chickpea Salad

I followed the recipe with the exception of feta cheese instead of mozzarella. It tasted a bit bland to me so I added dried mint, marjoram, and basil. Then I thought that I would use some of the Mediterranean fruit that I had on hand so threw in some chopped dates and figs and a potato that I had left from the Russian salad that I made Fri. So after all of those additions, it was fantastic! That's why I gave it 4 stars. It is a wonderful basic start to a great healthy filling salad.

Russian Salmon and Potato Salad

I made this for dinner tonight and we both enjoyed it very much. I ran out of mayo and used low fat sour cream to help stretch the mayo that I had. Also added dill to the dressing and garlic powder. It is a nice Lenten meal with a veggie side and a little apple sauce. We are looking forward to the leftovers.

Cream Cheese Penguins

I made them for a party yesterday and they were the hit of the day. Our hockey team is The Penguins, so several people wanted the recipe and directions. I did add some garlic and onion powders to make them taste better since some here thought they were tasteless.I made the cheese into tiny balls and put them in the freezer for a half hour to make it easier to manage. It is a mess to deal with the room temp cheese, so freezing helps to make it easier.

Wow this is delish! I wanted to take a pic but do not know how to get it small enough to add it here. Don't be afraid to try this recipe. It is so much better than mayo based dressing. Thank you Sharon!

Gourmet Sweet Potato Classic

I have been making this recipe for a few years and everyone loves it. I did not use the eggs since some of us are allergic to them, but it is yummy just the same. I don't measure anything any more just put in everything and taste for flavor. I used heavy cream the first time, but now I use low fat sour cream and it works just as well. Thank you for the recipe...it's a keeper!

Pittsburgh Sandwich

I have lived in the Burgh for over 70 years and have taken everyone of our exchange students to the original Permanti's at the strip district. The ambiance there is unbeatable in any other location.You sit at tiny round tables elbow to elbow with many characters there and the wait staff is wild and fun. Other than the missing fun, the recipe is oh so good, but oh so bad for you!

It is delicious! I have made it several times and have added thinly sliced onion the last few times and that is good too.The basic recipe is a good way to start, then tweak as you like.

Green Grape Salad

Since I had tons of grapes, I searched AR for an interesting recipe to use them up and decided to try this for a party. Everyone at the party loved it. I did cut down on the sugar since grapes are so sweet and added a tablespoon of vanilla yogurt. The hostess asked if she could have the small amount of left over salad. I will definitely make it again.

Loved it as did everyone who has tasted it here. The only change that I made was using half vanilla yogurt and half mayo. I couldn't make up my mind between craisins and grapes, so used both!

Baked Kale Chips

Six of us were playing cards and I thought that Kale chips would be a nice healthy snack. No one liked it. Maybe I did something wrong, but it tasted very bitter. I rarely follow directions so maybe if I add something else to it, we will like it. I love many other Kale recipes so it isn't that we don't like Kale.

Sweet Vanilla Cherry Cake

It is delicious, but way too much sugar. It made so little batter that I didn't have enough for a 9x13 pan so I used a smaller one,so the next time I make it will use less sugar. It had the consistency of biscuit dough, so I am thinking that strawberries would be a good topping also.

Whole Wheat Carrot-Raisin Muffins

The muffins were a hit at our church coffee, but I did have to tweak the recipe. The batter was extremely dry so I added a 1/2 cup more yogurt and one egg. I also used the whole orange juiced.(add some walnuts, too) I sprinkled a little cinnamon sugar on top and served with orange honey butter. Several ladies asked for the recipe, so we will be making them again.

Italian Potato Salad

This was good but with a couple of additions ,it can be great. I used white Balsamic vinegar, onions, oregano, and Romano cheese. My guests were very happy to eat it to the last bite.

Baked Omelet Roll

For those of you who complained about the flour taste, leave it out. I have been making this for 20 years and never use flour. But be sure to use the parchment paper or well greased foil.For kids I slice two thin pieces of the roll and place on a plate to form a butterfly with small strips of sweet red pepper for antennae.They think it is awesome and gobble it up.

Impossible Pumpkin Pie I

This recipe is very good, but just the basic ingredients for all kinds of "Impossible" Pies. Cocoa and choc chips make nice layers of goodness and any kind of fruit added instead of the pumpkin is easy and delish. I throw everything in a blender and pour it into a greased pan. It is my go to recipe when unexpected guests stop by.If you don't have sour cream or yogurt, use a little more milk and an extra egg. I have been using this recipe for 30 years and it never fails.

Rich Chocolate Truffle Pie

Chocolate French Toast

I have been making this for years adding almond flavoring and topping with sweetened whipped cream and fruit. My B&B guests loved it! If you are having trouble mixing the cocoa in, try mixing it with the sugar in a small amount of warm water first.
