The Best Gluten Free Brownies Ever...Seriously

These were delicious! I didn't tell my boys they were gluten-free and they couldn't tell the difference. I made just as stated. The only difference was that I used a pre-blend of gluten-free flour (Pamela's- really good and easy to use). I was curious about no baking soda, but I did not add it and the brownies came out thick and fudgy. The batter looked exactly the same when it came out of the oven as it did when it went in! I will definitely make these again and might add baking soda just to satisfy my curiosity... UPDATE- I did add baking soda the second time I made these. They puffed way up and then fell when they came out of the oven. This time the brownies were much darker and not as dense, much more the texture and color of a box brownie mix. Thanks, Lindsay these are delicious either way!!

Baked Sweet Potatoes

Yummers!! I opted for a little rosemary and thyme instead of oregano, and cut the pieces smaller. Sooo good! I always get compliments and questions about how they were cooked when serving to guests.

Fried Rice Restaurant Style

So I tried this recipe at the last minute and kept my fingers crossed. I didn't have any enriched rice and brown rice would've taken too long, so I went w/ good ol' minute rice. Cooked the rice in chicken broth as recommended. Used a cup of frozen peas and carrots. Also added pre-cooked non-breaded cut up chicken tenders. It was a huge hit! I was asked to make more tomorrow night and to make double so there would be leftovers. My boys did rock paper scissors to see who would get the bit that I left in the pan. One of my best throw-together dinners ever!

Easy Mexican Casserole

Yummers! I wasn't sure how this would turn out in terms of both taste and eye appeal as it was cooking, but we scooped it over lettuce and it made one of the best taco salads I've ever had- the meat actually stayed hot! I took the suggestions of many others and added 1/2 packet of taco seasoning to the gr. beef, omitted the gr. onion, chili beans, olives, and tomato. Instead used black beans, green chiles and a can of diced tomatoes. 1 to 1 1/2 cups of sour cream is plenty. Our whole family ate it up.

Six Can Chicken Tortilla Soup

Maybe it was the fact that I knew everything came from a can, or maybe it was that I added a can of cream of chicken soup, but I just wasn't thrilled with this soup. Didn't like the cream soup suggestion- made it taste like that soup from a bag you sometimes get in a restaurant. The best chicken tortilla soup is the Slow Cooker Chicken Tortilla Soup from this website. Just as easy when you put the uncooked chicken breasts in the slow cooker and shred later (just takes longer to cook)and tastes divine!!

Golden Broccoli Bake

I did change the recipe a bit to suit what I had in the pantry/fridge. I added garlic and mushrooms to the ground beef as it cooked and used tater tots on top instead of mashed potatoes. A yummy and easy twist. I used fresh broccoli, but will steam or add it to the hamburger mixture next time. I totally forgot to add the egg-- but it still turned out great. My non-broccoli eaters ate it up!

Quick Chicken with Asparagus and Provolone

Made this for dinner and my husband raved over it and wants to serve it when his parents visit! My two picky boys even ate it sans asparagus. I pounded the chicken first, and used a cup of broth and 1/2 cup white wine, fresh asparagus and given amounts of egg and bread crumbs to make six chicken breasts. Delicious with a great presentation. The extra sauce was poured on the egg noodles I served as a side. Yum!

Chocolate Sauce

I have made this recipe at least 10 times with the exact ingredients listed and it is delicious! My boys can't tell the difference (I saved an old Hershey's bottle and put it in there) The only change I make is that I let it boil on low for 5 minutes to thicken it, and it also thickens as it chills. Try it- you'll like it!

Slow Cooker Vegetable Soup

This is sooo good! I've made this soup several times. The first time exactly as written, but have found that using beef broth or beef consomme gives it a much fuller, richer broth. Also, adding thyme as an ingredient really made it complete. A great winter meal-You'll love it!

Slow Cooker Chicken Stroganoff

This was a super easy weeknight meal. Hubby and kids ate it right up. I added some water since it seemed to be overly thick, about a quarter cup sour cream and some ground pepper. I only used 3/4 of the cream cheese brick as well. This was a great no-fuss meal. It won't go in the meal rotation, but will be a nice change of pace every so often.

Easy Broccoli Quiche

Yummers! The great thing about this recipe is that you can play with it and make it suit your own tastes by adding your own flair. We like it with ham and whatever kinds of cheese I have on hand. Makes great leftovers too!

Michelle's Blonde Chicken Chili

I had to remind myself that I was making chili, not tortilla soup because that's what it reminded me of... And it's a great chili! Mexican/monterey jack cheese is huge in adding to the flavor of this. A little sour cream helps too! I made this in the slow cooker. I put in everything on med/med high, let the chicken cook, then shredded it and put it back in to cook longer. I halved the recipe as well and still had dinner for four and lunch the following day. I used 1 1/2 lbs of chicken, 2 T dried onion, 1 cup broth, 1 can chiles, 2 cans beans, 2 t. minced garlic, 2 t. cumin, 1 t. oregano, 1 t cilantro, 1/2 t. red pepper and 1/2 t. chili powder. I also added a can of mexican style tomatoes- added flavor and eye appeal! My husband loved it too- as many have said, better the second day!

Tomato-Cream Sauce for Pasta

Yum! My husband and I were pleasantly suprised with this. Tried it for the first time tonight and followed the directions for everything except the butter- omitted it, and the cream- used 2% milk instead. A terrific and deilicious alternative to jar sauce- easy too!

Spicy Pizza Soup

We really liked this recipe. Based on other reviews of soup being too thick I only used one can of tomato sauce. I also used Jimmy Dean Italian sausage (no casings) and it tasted terrific! I also used another reviewer suggestion and did not add pasta to the soup at all. I just poured the soup over the pasta until the pasta was swimming in it. Pasta stayed firm and was delicious. Made great leftovers too!

Balsamic Chicken

Made exactly as stated and it was a hit with the whole family! I doubled the recipe so had to use two pans on the stove. One pan got more sauce in it when I put the chicken in and it didn't have the nice glaze the pan with less sauce did. Both tasted great- but the glazed chicken was prettier.

Beer Butt Chicken

Tried for the first time today for Father's day and the hubby loved it as well as the kids! Followed recommendation of others and added rosemary to the beer and montreal chicken seasoning to the butter, otherwise followed as written. It took a little less than two hours on our grill. I served it with Foil Wrapped Veggies from this site. Great complimentary flavors!!
