Foil Wrapped Veggies

My first try at making grilled veggies and they were divine! Followed the recipe exactly, with the addition of half a diced red pepper. We like the crispy veggies that are closest to the foil, so we made two packets and used large pieces of foil for more surface area and spread out veggies in as few layers as possible. The sweet potatoes were awesome! Herbs were subtle and perfect.

Slow Cooker Chicken Stroganoff

This was a super easy weeknight meal. Hubby and kids ate it right up. I added some water since it seemed to be overly thick, about a quarter cup sour cream and some ground pepper. I only used 3/4 of the cream cheese brick as well. This was a great no-fuss meal. It won't go in the meal rotation, but will be a nice change of pace every so often.

Easy Mexican Casserole

Yummers! I wasn't sure how this would turn out in terms of both taste and eye appeal as it was cooking, but we scooped it over lettuce and it made one of the best taco salads I've ever had- the meat actually stayed hot! I took the suggestions of many others and added 1/2 packet of taco seasoning to the gr. beef, omitted the gr. onion, chili beans, olives, and tomato. Instead used black beans, green chiles and a can of diced tomatoes. 1 to 1 1/2 cups of sour cream is plenty. Our whole family ate it up.

Chicken Pot Pie II

This was really good, but still did not have the tang I'm looking for. I will try this again using more chicken broth and some cream, or maybe even a little cream cheese. I used two pie crusts (refrigerated) and everyone was glad I did. I know it was good because there were no left overs!

Autumn Cheesecake

My first attempt at cheesecake at it did not disappoint! I used lots of suggestions- bowl of water, microwave apples, and diced apples in small pieces. I actually included half of the water from the apples because it had the sugar and cinnamon in it and looked to good to waste. Turned out great! I left it in the over for a half hour after it was baked as well. Quite a bit of work, but worth it. It's delish!

Easy Pumpkin Muffins

Good in a pinch. I used a spice cake mix and the muffins were very moist. I needed a quick dessert (it baked during dinner) and this fit the bill as well as making the house smell yummy! Taste was good for so few ingredients- although eye appeal leaves something to be desired. I'm glad I tried them and will make them again when I need something quick and easy.

Easy Broccoli Quiche

Yummers! The great thing about this recipe is that you can play with it and make it suit your own tastes by adding your own flair. We like it with ham and whatever kinds of cheese I have on hand. Makes great leftovers too!

Grilled Bruschetta Chicken

Delicious and eye appealling- great for guests. I like to make the bruschetta mixture a couple hours ahead of time to allow the flavors to meld and be free of that while guests are over. Great flavor!

Michelle's Blonde Chicken Chili

I had to remind myself that I was making chili, not tortilla soup because that's what it reminded me of... And it's a great chili! Mexican/monterey jack cheese is huge in adding to the flavor of this. A little sour cream helps too! I made this in the slow cooker. I put in everything on med/med high, let the chicken cook, then shredded it and put it back in to cook longer. I halved the recipe as well and still had dinner for four and lunch the following day. I used 1 1/2 lbs of chicken, 2 T dried onion, 1 cup broth, 1 can chiles, 2 cans beans, 2 t. minced garlic, 2 t. cumin, 1 t. oregano, 1 t cilantro, 1/2 t. red pepper and 1/2 t. chili powder. I also added a can of mexican style tomatoes- added flavor and eye appeal! My husband loved it too- as many have said, better the second day!

Sour Cream Pork Chops

We thought this was really good. It's basically pork chops stroganoff. I browned mine as directed adding Montreal steak seasoning. I omitted the onion and opted for onion soup mix instead. I only used 1 bullion cube in the 2 cups of water. When the chops were done, I added a little extra cornstarch to the flour to make a thicker sauce, not gravy. I had it in the crock pot on med/med high for about 5 and a half hours. We enjoyed this and two picky boys even ate it!

Six Can Chicken Tortilla Soup

Maybe it was the fact that I knew everything came from a can, or maybe it was that I added a can of cream of chicken soup, but I just wasn't thrilled with this soup. Didn't like the cream soup suggestion- made it taste like that soup from a bag you sometimes get in a restaurant. The best chicken tortilla soup is the Slow Cooker Chicken Tortilla Soup from this website. Just as easy when you put the uncooked chicken breasts in the slow cooker and shred later (just takes longer to cook)and tastes divine!!

Baked Ziti I

This is a great meatless dish. I made it just as directed except halved the recipe and still had leftovers. I'm basing my rating on what the dish was. I really wanted it to be more like lasanga, but if you want something like that make sure you include extra ingredients like Ital. sausage, etc... and voila!

Szechwan Shrimp

I read the reviews, tripled the sauce, added the veggies, etc... and as this was cooking I realized I was making a Green Giant Create-A-Meal. Seriously, if you've ever had the Szechwan Create-A-Meal, this is the same thing except with more work and actually less flavor. They even include peanuts and awesome veggies in the package- all you add is the meat. Soooo, while this was pretty good (but didn't have nearly the flavor I thought it would) next time I will stick with my quick, easy, and tasty Green Giant Create-A-Meal.

Garlic Chicken

This is so easy and very good. It goes well with pasta -topped with Tomato Cream Sauce for Pasta- from this website, and a green salad. On its own it's good, although seems like it's missing something to enhance the garlic flavor. My husband and both boys ate it, so it gets at least 4 stars!

No Bake Double Good Dessert

Tomato-Cream Sauce for Pasta

Yum! My husband and I were pleasantly suprised with this. Tried it for the first time tonight and followed the directions for everything except the butter- omitted it, and the cream- used 2% milk instead. A terrific and deilicious alternative to jar sauce- easy too!

Slow Cooker Chicken Cacciatore

I took everyone's suggestion and added a can of tomato paste, but wish I wouldn't have. It was very, very thick. Loved the ease of preparation and my husband really liked it. Added lots of spices, but thought it have more of a tang. I'll make again using the original recipe on one of those nights when I'm in a hurry. A good dinner over pasta with a salad and rolls, just not a 5-star "the best" in my opinion.

Awesome Slow Cooker Pot Roast

I was surprised at how delicious this was- I'm not a gravy person, but this was tasty! I actually ended up using a 2 lb. arm roast- it's hard to find bigger cuts around here... I shook on some garlic powder before putting it in the roaster. I only used one can of soup and substituted a full can of beef broth for the water. After 3 1/2 hours it was tender and wonderful! The gravy was basically the consistency of water, so I added some flour to thicken it up and voila- gravy! Salty, but that's probably why I liked it. My husband loved it and thinks I actually know how to cook now.
