Apple Cake I

I made this when my in-laws were here for a long weekend and they asked me to make a second since we gobbled up the first! After reading other reviews I used 2/3 cup oil and 1cup white sugar and 1/2 cup brown sugar. Yummy!

Balsamic Chicken

Made exactly as stated and it was a hit with the whole family! I doubled the recipe so had to use two pans on the stove. One pan got more sauce in it when I put the chicken in and it didn't have the nice glaze the pan with less sauce did. Both tasted great- but the glazed chicken was prettier.

Baked Sweet Potatoes

Yummers!! I opted for a little rosemary and thyme instead of oregano, and cut the pieces smaller. Sooo good! I always get compliments and questions about how they were cooked when serving to guests.

Golden Broccoli Bake

I did change the recipe a bit to suit what I had in the pantry/fridge. I added garlic and mushrooms to the ground beef as it cooked and used tater tots on top instead of mashed potatoes. A yummy and easy twist. I used fresh broccoli, but will steam or add it to the hamburger mixture next time. I totally forgot to add the egg-- but it still turned out great. My non-broccoli eaters ate it up!

Slow Cooker Vegetable Soup

This is sooo good! I've made this soup several times. The first time exactly as written, but have found that using beef broth or beef consomme gives it a much fuller, richer broth. Also, adding thyme as an ingredient really made it complete. A great winter meal-You'll love it!

This was easy and pretty good, but not great. Easy way to use leftover chicken. Used flour tortillas since it was all I had. Might try again with corn.

Beer Butt Chicken

Tried for the first time today for Father's day and the hubby loved it as well as the kids! Followed recommendation of others and added rosemary to the beer and montreal chicken seasoning to the butter, otherwise followed as written. It took a little less than two hours on our grill. I served it with Foil Wrapped Veggies from this site. Great complimentary flavors!!

Foil Wrapped Veggies

My first try at making grilled veggies and they were divine! Followed the recipe exactly, with the addition of half a diced red pepper. We like the crispy veggies that are closest to the foil, so we made two packets and used large pieces of foil for more surface area and spread out veggies in as few layers as possible. The sweet potatoes were awesome! Herbs were subtle and perfect.

Slow Cooker Chicken Stroganoff

This was a super easy weeknight meal. Hubby and kids ate it right up. I added some water since it seemed to be overly thick, about a quarter cup sour cream and some ground pepper. I only used 3/4 of the cream cheese brick as well. This was a great no-fuss meal. It won't go in the meal rotation, but will be a nice change of pace every so often.

Easy Mexican Casserole

Yummers! I wasn't sure how this would turn out in terms of both taste and eye appeal as it was cooking, but we scooped it over lettuce and it made one of the best taco salads I've ever had- the meat actually stayed hot! I took the suggestions of many others and added 1/2 packet of taco seasoning to the gr. beef, omitted the gr. onion, chili beans, olives, and tomato. Instead used black beans, green chiles and a can of diced tomatoes. 1 to 1 1/2 cups of sour cream is plenty. Our whole family ate it up.

Chicken Pot Pie II

This was really good, but still did not have the tang I'm looking for. I will try this again using more chicken broth and some cream, or maybe even a little cream cheese. I used two pie crusts (refrigerated) and everyone was glad I did. I know it was good because there were no left overs!

Autumn Cheesecake

My first attempt at cheesecake at it did not disappoint! I used lots of suggestions- bowl of water, microwave apples, and diced apples in small pieces. I actually included half of the water from the apples because it had the sugar and cinnamon in it and looked to good to waste. Turned out great! I left it in the over for a half hour after it was baked as well. Quite a bit of work, but worth it. It's delish!

Easy Pumpkin Muffins

Good in a pinch. I used a spice cake mix and the muffins were very moist. I needed a quick dessert (it baked during dinner) and this fit the bill as well as making the house smell yummy! Taste was good for so few ingredients- although eye appeal leaves something to be desired. I'm glad I tried them and will make them again when I need something quick and easy.

Easy Broccoli Quiche

Yummers! The great thing about this recipe is that you can play with it and make it suit your own tastes by adding your own flair. We like it with ham and whatever kinds of cheese I have on hand. Makes great leftovers too!
