Bratwurst, Potato and Cabbage Soup

Very good! Fresh brats definitely help with the flavor of this recipe. I live in Wisconsin...so they are readily available. I used a little more water, but I think that was needed because of the amount of potatos I put in. I also added some s&p, and red pepper flakes. This was great. The ratios can easily be adjusted. Definitely a winner!

Delicious Black Bean Burritos

These are great! I make them as is...except double the recipe for plenty of leftovers. I always have this with guacamole and tortilla chips. Great meat-free dinner.

Quick and Easy Mexican Chicken

Very good, and simple to make with ingredients I usually have on hand. Spread a bit of salsa on bottom of pan before baking to make sure it doesn't stick. Served this with taco rice and corn.

Wisconsin Cheese Soup II

Very good. I used a bit more brocolli. The soup is pretty thick, so I added a little milk at the end to thin it down a little. Next time I will probably double the water and bouillon (since I add more brocolli). Flavor was great. I made garden salads to go along with it, and warm crusty bread. My 3 year old and husband loved this as well.

Cheddar Beef Enchiladas

My husband and I loved these. It makes a large batch. I used Lipton MeXican rice instead of white. I also topped them with sour cream and guacamole. YUM.

Aaahh! Potato Soup

Very good, quick and easy. I added onion and garlic as suggested. I also put some salt, pepper and crushed rosemary in the pot. Topped off with green onions, cheddar and crumbled bacon. Very good!

Sausage Crescent Rolls

I made these for Christmas brunch, and my uncle (who is a chef) said they were the best thing on the buffet. They taste really yummy with Jimmy Dean's Hot Sausage... just make sure you pinch the cresent together at the pre cut seams so they don't tear apart.

American Lasagna

Sauce on this is really delicious. I am making the sauce alone tonight to serve over rotini. When making the lasagna, I would double (or triple) the sauce. I ran a little short between the layers, and any leftover sauce can be frozen. The ricotta was also very good with all the parmesan cheese blended in. Thanks!

Gary's Stuffed Mushrooms

These are AMAZING! They are a very easy and affordable yet elegant and delicious appetizer to make. I generously stuffed 24 button mushrooms, and could have done 10-15 more. So unless your shrooms are gigantic...buy more! Besides, they are so delicious 12 wouldn't be enough anyway. I did cut the butter to 1 cup. I also did not have crushed red pepper, so I sprinkled louisianna hot sauce on to of them before baking. It gave them a nice little splash of color as well. I dressed them up with the parsley flakes at the end. Thanks for such a great recipe!
