Broccoli in Roast Chicken Drippings

We really liked this, much better than roasting with olive oil. I was lazy as well and used garlic powder and a bit of sea salt. Great way to eat your broccoli.

Curried Honey Mustard Chicken

We loved this. I used chicken thighs with bone and skin and marinated it for about 2 hours before baking. I did chicken out only used half the cayenne as I had a spicy curry seasoning. I also used half butter and half olive oil and instead of honey used Splenda for diabetic reasons.

Kelly's Super Simple Shower Punch

I thought this punch was great...as a person who needs to watch sugar intake I used diet sprite and raspberry sherbert and I didn't have a big spike in my blood sugar after having a small amount. Usually I can't drink punch. It WAS super easy to make and tasted great. I made it for my parent's 50th anniversary party and it was gone by end of the party!

Oregon Salmon Patties

We loved this recipe. I purchased canned salmon from Costo, deboned and looking like tuna. I added a few more herbs and spices and cut back on the bread crumbs. They fry up beautifully and I used canola oil. whipped up a tartar sauce recipe from this site ...yummm!

Kalua Pig in a Slow Cooker

This is really good. My girlfriend from Hawaii poured the WHOLE bottle of smoke flavoring over it, which gave me a headache while it cooked. But the taste was not overpowering, a trifle salty in my opinion. Need to have like a creamy potato salad with it to tone it down.

Teriyaki Pork Tenderloin

Our Pastor was coming for dinner and I wanted the meal to be extra good and special...this was it. I didn't have low sodium soysauce so I added 1 tblspn of water to be on the safeside of being over salty, and added about 2 tsp honey. I marinated it for close to 24 hours. I was a little leary of cooking at a high temp so I cooked it at 400 in a convention oven, used the oven temp probe and it was done to perfection in about 45 min. Everyone raved and everyone loved it, including the finicky children. I was one happy cook.

Quick and Easy Alfredo Sauce

This makes me happy! Since I was using the alfredo sauce in another dish, I left out the garlic and spices and added enough 2% milk until it reached the consistancy I desired. It was thick, rich and delicious. My husband, who used to own a restaurant, was really impressed.

Pollo a la Crema

I thought this was pretty good. I used 2 TBL of La Victoria's red taco sauce instead of ketchup, and added about a 1/4 cube of low fat cream cheese. I am used to eating this with shrimp at the restaurants and I didn't think chicken in it was as good. the sauce is really good and next time I'll use shrimp instead. Thank you!

Since we love mushrooms it's hard to say we didn't really like this. Just our personal preference that we do not really care for mushrooms prepared this way...though we ate them.

Oven Fried Chicken III

This was a nice way to make chicken, especially for my little ones who are picky. I used a basting brush to swath on ranch dressing and coated them in italian style breadcrumbs. That was it. They baked for about 50 minutes in a convection oven and were crispy.

Broiled Tilapia Parmesan

I thought the sauce was the best part. The short amount of time it took to cook was really nice. We had never had tiapia before and though it was good, I think that another type of fish would be better. All in all it was good and the picky eaters said they'd try it again.

Mexican Rice II

I never tried to make Mexican rice before...and I am glad I did. I had to make some modifications based on what I had on hand...I usually keep steamed rice in the frig. so I warmed up the oil then added 2 cups of cooked rice, after it warmed up and separated I sprinkled taco seasoning over the rice and added about a 1/2 cup of salsa and a smidge of red taco sauce...all to taste. that was it! And my husband said my home-cooked Mexican food really improved with this recipe.

Chicken Pot Pie VI

Delicious! this was very easy to prepare and turned out wonderfully. I wasn't sure about seasoning the water to cook the chicken in, so I used a bullion cube and put the onion and seasonings in the mix. I only used one crust on top of the pie and used 98% fat free soups with a smidge of milk. I used an egg wash on the crust. In my oven it was done in about 35 minutes and my family loved it.

Awesome Slow Cooker Pot Roast

Holy cow! (no pun intended) this is delicious, especially considering we're not big beef eaters, nor do we particularly love meat cooked in the crock pot. I used a prime rib roast and removed the slab of fat on top. With 1 can of soup and water (didn't have 2) the gravy was still rich, but the meat was very tender and absolutely delectable. At about 4 lbs. it only took 4 hours on high and another hour on low to be cooked through.

Refried Beans Without the Refry

Delicious! Who knew refried beans could be soooooo much better than the store's? I didn't have a jalepeno so I used a few drops of habenero hot sauce. It cooked on its own for 7 hours and then I used a hand mixer. So easy, so good.

Chicken Stew with Dumplings

This is wonderful chicken and dumplings, really just like my grandmother used to make. I used frozen chicken thighs and stewed them in about 20 minutes. After I scooped off the goop on top I added a can of chicken broth. I chopped the carrots, onion and celery fine and left out the potatoes and peas. After it simmered about 45 minutes I added about 1/2 cup of milk then the dumplings. I have never had the dumplings turn out so wonderfully, they were perfect. My family really liked it too.
