Oven Roasted Teriyaki Chicken
This is the best recipe for teriyaki chicken I have tried, and I have tried a few. Due to my youngest son's food sensitivites I had to switch out wheat flour in place of cornstarch and brown sugar/stevia blend in place of splenda. The rest I kept the same. i did bake it at a lower temperaturem,375, for longer, 1.5 hours, and everyone loved it. A keeper!

Cranberry Apple Pie II
One of the best pies I have ever made! I used 16 oz of homemade cranberry sauce and then covered the pie with tinfoil until the last 15 minutes. It turned out perfect. Should have taken a picture, but we gobbled it down.

Low Carb Zucchini Pancakes
We were impressed! My husband said 'best zucchini he ever had'. We eat diabetic friendly, and I have lots of zucchini in the garden. Even my boys thought it was 'edible'. This is easy to make as the Zucchini is easy to shred, getting the water out of it was the difficult part. I didn't have basil leaves, and I used shredded Mexican blend cheese, but I kept everything else the same. I noticed it took longer to cook on each side than stated, but that was probably because of the water content.
