Banana Oat Muffins

These muffins are great! I used 1/2 cup whole wheat pastry flour for some of the flour, applesauce in place of the oil, and added some walnuts. Delicious.

Chicken Enchilada Casserole II

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

This is an awesome salad! I had a version of this in a deli recently and it was heavenly. So when I found this, I was delighted. I too, switched some of the salad ingredients around, such as apple instead of orange and added dried cranberries. I made the dressing per the recipe and it was excellent. I will make this one a lot. I have never thanked anyone before for a recipe on this site, but let me say it now!! Thank you!

Mini Meatloaves

I have been making these for years and they are a favorite. My sister has the recipe too, and makes them all the time. My son recently married and when I went to visit him, he begged me to make these and give the recipe to his wife. A favorite in my family.

Bottom Round Roast with Onion Gravy

This was pretty good. I liked the fact that it makes its own gravy, since I don't make gravy well. Next time I will skip the vinegar, it gives a little twang that wasn't that great. Needs more seasoning as others have noted, but otherwise it was really pretty good, I will make this again.

Baked Potato

After 30 years of baking potatoes, the way I love them is to poke a few times and then wrap them in foil with a little butter. Bake at 400-425 for an hour. I love my potatoes a little more "done" they have a different/better taste...like a restaurant baked potato.Great for a weekend dinner, just start the potatoes before the rest of the meal and it isn't so time consuming.

Campbell's Kitchen Creamy Chicken Enchiladas

These were very good. My son had his doubts due to the soup factor, but he loved them and came over tonight for the leftovers. I will make these again. The only thing I did differently was add cheese to the top. *Upon eating some of the leftovers of this tonight, I agree with Georgia, I think I prefer a more authentic enchilada recipe to this one. This is ok, but won't make it on a regular basis.

Herb Roasted Pork Loin and Potatoes
