Nobody ever says "yea!!! Joyce is cooking!!" but then no one ever runs away either...I guess that means I'm okay.
I am a busy full-time work outside of the home married mom with two teens. My husband and I will eat just about anything, daughter, maybe 75% of anything..son about 25% of anything.
I don't cook to cater to the fussy one. My greatest challenge is something quick, or that can be started the day before and finished by my children while I'm at work.
I don't like cooking much and left-overs ARE eaten without fuss here...they wouldn't dare complain.
I'm not going to cook everynight!
Unfortunately I'm the designated food person like most moms are; old school in that way but my husband and kids will finish what I start.
My kids will both know how to cook very well when they leave home.
I'm an expert delegator around my house and my husband does ALL of the cleaning up after I cook and I keep the kids busy with chores. I'm no martyr!
My favorite family cooking traditions
Danish cuisine...yea really. My dad's mom was first generation Danish (his dad was 1/2 of same) and I learned to make aebleskivvers, meidesterpols, boef, frikadeller. Pretty basic food actually, but fond memories and I love all of them.
My cooking triumphs
some fine gumbo and chicken fajitas that my family raves about.
Many of the recipes I've gotten here have been popular too, the grilled salmon I rocks, as does the slow cooker turkey breast, the hot and sour chicken soup, the original homemade italian beef, crock pot chicken and dumplings, and flatlander chili...mmmm
My cooking tragedies
I have bad luck with fish. I always have to have someone around to make sure I don't overcook it. I think I'm getting better though..after 30 year of cooking!
