Sweet Coated Pecans

Reviewed: May 27, 2009
Ditto on using half white/dk brown sugar..spread some soft butter on foil inside a cookie sheet. Easy cleanup, also used 2 tbsps vanilla instead of the water...When done, I laid out on parchment paper and put some extra fine salt before they cooled. came out superb!

Seven Layer Bars

Reviewed: Mar. 30, 2009
Whats not to like! I coated parchment paper with baker's spray, and used 2 cups of crumbs instead of 1 1/2 c. and an extra tbsp of butter (for a little thicker crust). I added 2 tbsp of milk to the sweetened canned milk and warmed it in the micro briefly to make easier to pour. I find that you need to press down firmly on the top to avoid crumbling. Cool before cutting, great!

Cream Cheese Pound Cake III

Reviewed: Mar. 28, 2009
Well I won't be using an other recipe for pound cake this was exquisite! I was very careful to let my kitchenaid do MUCH blending with the butter, cream cheese sugar part, and then also with the eggs one at a time. REALLY IMPORTANT TO BLEND TOTALLY (all ingredients at room temp). But when i added the flour, i simply incorporated it only, no extra blending (great advice, thanks to another reviewer). I also used 1/4c less butter and 1/4c buttermilk (from powder) instead. Be careful not to take it out too early, i used a short toothpick in a bundt pan, but after finding a longer bbq stick, i was glad i didnt take it out too soon. Toothpick was too short and may appear done when not. Total cooking for me was 1hr 12 mins at 325 in a coated bundt pan. EDIT: I made this again and used a loaf pan AND a bundt pan..I'll let you know

Hurricane Cake

Reviewed: Mar. 25, 2009
This was superb...I used a regular choc. cake mix and made it into a pudding cake (4 eggs, oil , instant pudding, etc) I also added my usual 2 dollops of mayo to retain moisture, as well as 2 tbps of hersheys syrup. I then used 9 in round pans with parchment paper lining. Really easy to remove. I inverted it and peeled off the paper in one easy piece. It looked so pretty too! one more thing, i poured a quarter of the cake batter in each pan, then half the cream cheese mixture and then the rest of the cake batter. Just so it would be more even.

Easy Lemon Bars

Reviewed: Mar. 15, 2009
definitely have to double the cream cheese, sugar and lemon juice (filling part) Also I buttered the glass casserole dish, cant imagine how it would have come out without doing so. But all in all for a quick recipe i think it is very good. p.s. I forgot that i added a tsp of vanilla and a tablespoon of butter to the filling :)

Spintz Cake

Reviewed: Feb. 12, 2009
I too was very disappointed in the dryness of the cake. I liked the filling, but I did follow another's advice and added more peanut butter and 8 oz of cream cheese. It was light and fluffy then. All in all though it was a disappointment

Savory Corn Muffins

Reviewed: Feb. 12, 2009
I guess i was expecting it to be sweeter, came out good, used 2 insulated layer cake pans and they were moist. To make them a little sweeter, I warmed up some maple syrup and butter and then they were very good! p.s. in the recipe i added one extra pat of butter.
