These are absolutely delicious, and have such a fantastic texture. I halved the recipe, and made a few changes -- used 3/4 whole wheat, 3/4 all-purpose, and no oat-flour. Also, added a bit more carrot, 1/3 chopped candied ginger, and blueberries. Oh my goodness, they're the perfect muffin. With the little additions, they're definitely a five. Great, versatile recipe!
