Eileen's Spicy Gingerbread Men

Made them with blackstrap, and they were DELICIOUS. If you like a really spicy cookie, don't be afraid to use strong molasses! Only add more flour when REALLY REALLY need it -- just enough to make the dough workable, and so it doesn't stick to your rolling pin. Too much flour makes a really dry cookie, and dilutes the tastes that you really want. Also, watch those babies when they're in the oven! I left my first batch for ten, and they burned around the edges. Still made an amazing, crispy cookie.. but definitely burned. Wonderful recipe, thank you!

Downeast Maine Pumpkin Bread

BEST autumn bread I've tasted. I got away with using only 1TBS of oil, replacing the rest of the fat with a 1/2 cup of applesauce, and a 1/2 cup of pumpkin. If you do this, discard all but 1TBSP of water from the batch! I used mainly whole wheat flour; 1/2 cup of brown sugar Splenda, and 2 cups of white baking sugar. The spices are perfect, the bread is succulent, it all just comes together deliciously. I'll be making this for family and friends, time and time again!

Triple Berry Crisp

I've made this recipe a couple of times now, and it is the perfect blustery-day pleasure. I always halve amount of crust, use just a half-cup of butter, and double the berries -- it's just amazing. Especially good with only blackberries.

Banana Oatmeal Cookies III

Mmm, these are so good. Definitely for lovers of banana bread. I used 1/4 of applesauce instead of the same amount of Crisco, and half brown sugar instead of white. So, so so tasty.

Peanut Butter Cookies with Chocolate Chunks

Perfect! I threw in just over half a bag of peanut butter chips, and the result threw everyone just about over the moon. Just the right chewiness -- I just used President's Choice organic, *crunchy* peanut butter, and the chunks were the most mouth-watering size. Never tasted a better peanut butter cookie.

Raspberry Squares II

So tasty and summery. I made them with blackberry jam -- an 8oz jar -- and used almonds and the zest of a lemon in the crust. Such a perfect picnic dessert. For me, though, it was too sweet.. but that would be solved by using fresh, sugared fruit, rather than jam.

Chocolate Chocolate Chip Cookies I

To die for! I added a couple of tablespoons of instant coffee, in one batch, and threw blueberries into the next. Even though I generally lust after the darkest chocolate possible, I loveloveloved these with mini chocolate Kisses.

Zucchini Yogurt Multigrain Muffins

These are absolutely delicious, and have such a fantastic texture. I halved the recipe, and made a few changes -- used 3/4 whole wheat, 3/4 all-purpose, and no oat-flour. Also, added a bit more carrot, 1/3 chopped candied ginger, and blueberries. Oh my goodness, they're the perfect muffin. With the little additions, they're definitely a five. Great, versatile recipe!

Pineapple Sunshine Muffins

Mmm, these are fantastic! I switched the carrot for zucchini, and used 1/4 of applesauce for half of the butter, and it worked out deliciously. Next time, I'll have to try the original carrot.. and maybe add some coconut to the mix. Thanks so much! EDIT: After allowing to cool a bit more, oh my goodness, such a five-star recipe. Definitely going to try some with berries, too.
