Easy Quiche

We had this for "breakfast for dinner" and it went over well. Seemed to brown too fast on the edges so next time I will tent it with foil for the first half then remove to brown at the end. I added a few dashes of salt and pepper and I am sorry I added the salt b/c it was too much with the saltiness of the ham, cheese, and butter. I might venture away from the ham and broccoli next time to see what other combinations work!

Southern Dill Potato Salad

This was pretty easy and tasted great. I diced the potatoes before boiling but the 20 min was a bit too much since they were small chunks so adjust accordingly if you dice first. My husband doesn't like hard boiled eggs so I put some aside without and then added only 3 to the rest of the batch. I followed the measurements other than just a tad of Dijon per our taste.

Slow Cooker Chicken and Dumplings

This was a simple yet yummy dish for the whole family (kids 7,9). I put frozen breasts in crock pot on low all day. I added some chicken seasoning to the mix plus 1/2 package of frozen veggies. Towards the end I turned it to High added one can of the biscuits. Each biscuit cut into 4 pieces. Cooked on High about an hour and they were perfect. Next time I won't cook the veggies with it the whole time b/c they were too mushy. Maybe add them 2 hours till end time but then that complicates the recipe!!

Apple Crisp II

The flavor was good but the apples were too mushy for our taste. Next time I won't add water. I also cut them very thin so I will slice thicker. I doubled the topping but it was a tad too much so I think 1.5 the amount of topping would be perfect. Also added a dash of nutmeg for our taste. Great start just need to modify the mushiness.

Slow Cooker Latin Chicken

I really liked this dish but my family wasn't as thrilled. Partly because I cooked it for 6 hours on low and it turned out quite mushy. I was a little nervous about doing 4 hrs on low b/c my slow cooker says to cook things on low for 8-10 hrs. So, I went with 6 and it was too long. Only thing I did different was use one can of corn in place of one of the cans of black beans. My salsa was mild too. I used boneless skinless thighs (which were a little more difficult to find in the store) but it was really good verses using chicken breast. Next time I would dice the red pepper instead of slice it. I was also a little generous on my broth and salsa measuring to be sure it didn't dry out.

London Broil II

This turned out really good. We liked the flavor a lot. No steak sauce needed! They did not have flank steak at my market so I had to settle for some kind of Beef Round Steak or something. I halved the recipe for the amount of meat but still used one clove of garlic. I also added some meat tenderizer instead of the salt b/c I was afraid of tough meat. Marinated it over night in a resealable bag. I might try adding a tsp. of lemon juice next time or at least cook it till still pink b/c it was overcooked some which makes it tougher. Will definitely make this again! Even my picky 7 year old daughter ate some.

Slider-Style Mini Burgers

These were pretty good. Scaled down the recipe for 12 and used Hawaiian rolls for the buns. It was hard to keep the crumbled beef on the little buns and it mostly fell off and cooked on the tray and got hard. Needs some kind of sauce for the top. We used ketchup but it wasn't quite right.

Ground Turkey Casserole

didn't really like the cream cheese mixture on the top. I think I would rather go with a more traditional ricotta type thing with this type of dish and layer it in the middle. I did mix the sauce with the noodles and meat b/c otherwise the noodles would just burn on the bottom and be dry.

Best Fried Walleye

I thought this was quite good but the kids and husband just thought it was okay. Walleye doesn't seem to have a very strong taste so you would think a simple coating would be good but I guess we wanted to add some flavor. Maybe a dill sauce over top would do that.

Guacamole

So good! I only used 2.5 avocados b/c that is what I had and only did one clove or garlic b/c I didn't want it to overpower the avocado taste. Used a tad less salt and half a lime. Turned out great.

Roasted Garlic Cauliflower

This was a great new way to eat cauliflower. I used three cloves of garlic which wasn't quite 2 TBS. and it was enough for us. I also did not have fresh parsley on hand to top it off. I covered the dish at 425 degrees for about 25 min then just sprinkled some cheese on top and broiled it on low for about 5 min. Any hotter a temp or longer the garlic would have been burnt. The kids weren't impressed but my husband and I loved it.

Pasta Fagioli Soup II

This soup was good. Not a big fan of the bacon in it b/c it got really soft and mushy once mixed with all the liquid and I like my bacon crisp. Maybe if I just cut down on it or used sausage like other suggestions. Used fresh spinach. I also sauteed some onion with a fresh clove of garlic (instead of a whole tbls) and omitted the salt due to the high content in bacon and broth. Should probably cut the recipe in half for my family of 2 kids, 2 adults b/c after 2 days nobody wanted to eat it anymore and it got wasted.

Slow Cooker Beef Pot Roast

This was very good. Followed the recipe other than only using one 14.5 oz can of chicken broth instead of 2.5 cups and also only had dry rosemary and thyme on hand. I used a boneless roast instead of the bone-in.

Slow Cooker Salisbury Steak

This was pretty good. I followed the recipe exactly even though I was planning on getting reduced sodium ingredients based on other reviews and then forgot. Next time I will buy the low sodium b/c it is a bit too salty otherwise. My kids thought they were like mini meat loafs and preferred to scrape off the gravy (which I love!) and put ketchup on them! Maybe I will add fresh mushrooms to it next time.

Old Fashioned Onion Rings

These were good but a little tricky to make without a deep fryer since I didn't have any way to know the temperature of the oil. The first one I had my stove set at 8 and it started to burn too fast so I turned it down to 4 and they didn't cook so probably around 6-7 is good. If you let the onions sit too long to drip then the bread crumbs do not stick so well and the whole breading starts to come off in the oil. I am sure it all takes practice to get it down right.

Slow Cooker Chicken Taco Soup

We really liked this easy recipe. I pretty much followed directions other than using pinto beans instead of the chili beans and since we are not big beer flavor fans I used chicken broth. Ok, so maybe that is a major change to the base flavor! I put frozen chicken breasts in the crock pot on low for close to 8 hours since it was overnight and then shredded it and it was perfect. I think I will do one can of tomatoes with chilis and one plain next time b/c it was a bit spicy for the kids (used Rotel with chilis, lime, and cilantro). I added a little dry cilantro to it as well. Sour cream and chips is a must!

Unbelievable Chicken

This was pretty good. Followed the recipe other than having to use honey mustard instead of coarse ground and I only used 2 tbs b/c I didn't want it to be over powering. It was too salty for our taste though so I would cut down to 1 tsp or even 3/4 tsp. salt. We are not huge mustard fans so I don't think it will be a staple but it is good for once in a while.

Parmesan Garlic Orzo

This turned out good. Had to use dry parsley b/c that is all I had on hand. Used 3 cloves of garlic and about half the butter called for. My husband even liked it and he doesn't like rice type things which this is more like than an actual pasta.

Creole Crab and Corn Chowder

This was really good. I used a red pepper in place of the jalapeno b/c we don't like things too spicy and kids were eating it. I used one can of chicken broth and the rest water for flavor per the video and only a pinch of the cayenne for our taste. Since it is corn season I used fresh corn (7 ears) and it was great, although I might try 8 ears next time. I will try frozen in the winter months. I could not find fresh crab in my town so I had to use a high quality can (Miller Select Special White) 6.5 oz and it was plenty of crab for the soup.
