Exquisite Pizza Sauce

This is a great pizza sauce recipe. I multiplied the recipe by 6 and canned it what I didn't use on the pizza I made for dinner. I didn't have anchovy paste or honey and I left out the cayenne pepper purposely to keep the heat down. I added sugar to taste, which ended up being about 1 1/2 tablespoons. You need some sugar to keep the balance of flavors with the spicy peppers and the bitter of the tomato. I also had to substitute one whole minced onion, and about 4 cloves of fresh garlic for the powder since I didn't have powdered. I blended everything after cooking to make a smooth velvety sauce. Overall, this recipe is very easy and it tastes great. It is easily substituted for what you have on hand or personal taste preferences. My personal tastes: I added one cup of dry red wine and let everything simmer for an hour before canning.

Honey Grilled Shrimp

I was looking for some sort of glaze with ingredients I had on hand and this fit the bill. I didn't have many of the ingredients for the marinade so I didn't do it and just mixed up the glaze to brush on the shrimp and veggies while they cooked. I used an indoor electric grill and this came out great. It didn't cover up or overpower the shrimp flavor and was just the right amount of sweet and tang. Served on a bed of steamed jasmine rice and a small garden salad. Absolutely great!

Chocolate Chip Cheese Ball

I was concerned about this cheese ball because it seemed too soft but it ended up being a bigger hit at our New Year's party than my traditional cheese ball. I'm glad I made it! I did a snowman design by mixing in the nuts, rolling in powdered sugar, and then using more mini chips for the buttons and face of the snowman. Very cute! Served with graham crackers. Everyone loved it and said it tasted like cookie dough. This is a keeper!

To Die For Blueberry Muffins

These were fantastic. I followed the recipe exactly the first time and then made a second batch just giving the tops a light sprinkling of clear sugar sprinkles, like you see in the bakery. Personally, I do not think these NEED the crumb topping as they are plenty sweet, but if you are looking for that extra oomph here you go. The blueberries do not sink since the batter is very thick. Do not over mix or over bake to keep them moist and delicious. Great recipe!

Chocolate Orange Fudge

This turned out good but I expected more orange flavor. I doubled the zest and still didn't quite get the flavor I expected. I'm thinking to maybe add some extract next time. It was still very good but I wanted to really taste the orange and it was lacking.

Creamy Peanut Butter Fudge

I've never made fudge before this but this recipe turned out just like I expected. I didn't make any changes and I had no problems with it turning out perfectly. I gave out as Christmas treats and it was very delicious and very easy to make. Awesome!

Best Chocolate Chip Cookies

Great recipe! I followed the recipe exactly and got exactly what I expected. Chewy delicious center, crisp edges, and great flavor. I gave them out as Christmas treats and got rave reviews, even days after they were made. Be careful not to over bake them since they continue to cook after you take them out but still tasty even messing them up. This recipe makes a lot of cookies so it is okay if you slightly overcook the first batch like I did :)

Pizza Dough II

The dough came out perfect and I did the instructions exactly as described. I didn't have the wheat flour so I just used bread flour but it didn't matter. I made two pizzas right away and froze the other one to later use for mini calzones. If you have soggy crust perhaps you are putting too much sauce? The crust came out with nice flavor without being too thin, thick, chewy, soggy, or overpowering. Perfect for a homemade pizza night!
