Chiles Rellenos Pie

Reviewed: Mar. 20, 2012
this was great! my husband doesnt eat rellenos at restaurants but i do, and it tasted darn similar. The texture of course was a little different. I was skeptical about the egg/milk/cream topping..but when it was cooked it looked great! we halved recipe and baked in a 9x9 square pan. i added salsa at the table. i accidentally put chicken on before the cheese...which led to the cheese melding with the topping...which made it look like cheese....which we thought was great :) i also eyeballed the cheese, i just did enough to cover the chiles, it def wasn't 2 cups worth. it was plenty. will make this again :)

Bean Soup With Kale

Reviewed: Mar. 20, 2012
I halved the recipe...I only had 1/2 an onion + 1 bunch kale which came to just over 2 cups worth... but used a whole ctn of stock and 2 regular tomatoes. shouldve added another can of beans because nobody would've known they were in there! i pureed 3/4 the kale because my hubs is leery of anything leafy & green lol but he'd eat it if it was pureed in soup so thats what I did. Didnt have fresh parsley but did have parm so a little sprinkle went on each bowl. will make this alot and play with ingredients a little bit...maybe some shell pasta a la minestrone?

Roasted Brussels Sprouts

Reviewed: Jan. 30, 2012
loved it, especially for its simplicity and ease in prep. we buy our sprouts prebagged from Costco so all you need to do is dump in the oo and seasonings and dump them out on a tray.

Cookie in a Jar

Reviewed: Dec. 4, 2011
might go buy more jars to make more...this was my first time creating "cookie in a jar" gifts for Christmas and it was a lot of fun. I would like to keep some made up in my pantry for last minute thank you and hostess gifts. I used up items I had in my pantry so I made a variety of "flavors" - some had m&ms instead of chips. Others used Heath toffee bits instead of white chips. LOVED that I only had to dirty up one 1/2 cup measuring cup. no problems not fitting everything in the jar, but it came a little close on the ones that used M&Ms instead of chips. I selected this recipe over others because I didn't want to include nuts to avoid possible allergy issues, and I liked having Krispies as a unique layer.

Roasted Garlic Cauliflower

Reviewed: Nov. 21, 2011
loved! i just put florets a glass dish and poured the oo on it and stirred along with a few spoonfuls of jarred garlic. skipped the parm. didn't have problems with anything burning like some others did.

Taco Seasoning I

Reviewed: Nov. 12, 2011
Made this when I started browning ground turkey for tacos...and then realized I didn't have any Taco packets. I used "Hot Mexican Chili Powder" instead of regular. I used cayenne pepper instead of the red flakes. Making this was actually better for us, because we have to begin a low-sodium diet. I also left out the sea salt. Nobody knew the difference!

Roasted Cauliflower Soup

Reviewed: Nov. 6, 2011
Fantastic (and I hate cauliflower!) My 1 year old gobbled up two babysized bowls. I subbed 4 lg garlic heads for the powdered garlic - will use double that next time. I used 1/2 & 1/2 instead of milk because I needed to use it up. Blended it all with an immersion blender. Will definitely make again

Skillet Cherry Cobbler

Reviewed: Nov. 5, 2011
Surprisingly delicious. Kinda weird to have a sweet dumpling instead of something crispy crumble. I used apple filling and didn't have rind so left that out. Doubled it to use the whole can of filling. I'll make it again it was tasty

Krazy Garlic Trout

Reviewed: Oct. 14, 2011
this was just okay for us. the flavor just wasn't what i expected, considering how much garlic was in there. i did like the ease of using the foil packets, and it kept the fish very moist. it was very easy for the skin to just peel right off

Stephen's Chocolate Chip Cookies

Reviewed: Sep. 4, 2011
this was a GREAT cookie. I wish I had all the different chocolates/nuts but I only had semisweet chips & chopped walnuts. I love how they turned out, they cooked perfectly. I halved the recipe to bake 1 full cookie sheet worth, and then flash freeze another batch for baking another day. It was the perfect amount :) thanks!

Fluffy Cake Doughnuts

Reviewed: Sep. 1, 2011
Used this recipe to try out my 2 new mini donut pans. They were okay and fun to make but I'll look for another recipe. I wouldn't call these "fluffy". I wanted a fluffy donut like you get in a shop. If I cant have that then I'd rather go for a denser cake donut. These were pale as reviews said but they looked fine to me...especially once glazed. I shook half in a baggie with cinnamon and sugar, it stuck well if done when the donuts were hot. Glaze was ok, I had to add more liquid. Dipped the tops in it then let dry on a rack. Glaze set up nicely! I thought this recipe was very easy to make but I just want a different consistency next time

Filet Mignons With Pepper Cream Sauce

Reviewed: Aug. 29, 2011
First time making a cream sauce for steaks. I wanted to dress up our filets mignon with something different and this was great! I halved recipe but added more broth because the halved amount wasn't enough to deglaze the pan. I served sauce on the side because I wasn't sure if we'd like it - but even my picky husband thought it was great as a dipping sauce :) win!

Smothered Green Beans

This was great! I removed the bacon & added it back in after the beans were done cooking, I didn't want it to get soggy. I also just realized I forgot the garlic, oops - we didn't miss it though

Simple Scones

Reviewed: Apr. 29, 2011
I still can't believe how good these turned out. I got off work at 2:30am and raced home to bake these scones & watch the Royal Wedding :) I was eating one fresh out of the oven in around 40 minutes. Thanks to other reviewers for the food processor tip - it was SO SIMPLE. I never made scones before - usually my go-to is muffins. It's now scones!! I did the cranberry-orange variation, I zested a whole orange right in the bowl, not sure if it was the 1 tsp the recipe called for. I only froze my butter for about 5 minutes, and I used fat free sour cream. I can't wait to try all the other variations; someone else mentioned making ham-green onion-cheese kind, I'm very excited to try those next!!!

Heavenly Hot Dog Sauce

Made a few hours before a football party and kept warm in crockpot. Intended it to be for chilidogs but a lot of people ate it plain too. No complaints, no leftovers. Very easy to make.

Veal Scallopini

I hated it but hubby thought it was good... Maybe I just don't like veal. Was glad I served with thin spaghetti on the side since that's all I ate after 2 bites of veal.

Restaurant Style Chicken Nachos

Reviewed: Dec. 4, 2010
Great starter recipe...I chose this one because it called for shredded cheese & not processed cheese like most other nacho recipes. I made it just for me to eat, so I cut it down a bit and just eyeballed everything. I did add a bit of taco seasoning to the chicken mixture. Next time will add beans etc. Someone recommended making it in a pie pan - great tip and worked great to take it straight from the oven to the table
