Lentil and Sausage Soup

Really good soup. I wish I had put the sausage aside and added that in at the very end because it gave all of its flavor up to the soup. I also added a diced sweet potato when I tossed in the tomatoes and some spinach at the very end. Very yummy recipe!

Stuffed Green Peppers II

Good start but I added quite a bit to make this recipe amazing. First, blanch the peppers in boiling water for 5 minutes. Brown meat with 1/2 of an onion, 2 cloves of crushed garlic, dashes of celery salt, oregano, basil and chili powder, and 1/4 cup of quinoa. Drain. Add in rice, water, 1 can diced tomatoes with green chiles, 2 diced fresh tomatoes, 3-4 handfuls of fresh spinach and a few dashes of chia seeds. When the rice is tender fill the peppers. Top with a spoonful of pasta sauce and cook in 345 degree oven for 15min. Top with cheese and cook for another 5 min. Pour more sauce over peppers to serve. Great with garlic bread. Delicious!!

Cheese Fondue

Zucchini Corn Fritters

Delicious!! I think I added in a bit more zucc and I scaled down the sugar to about 1/3 cup. I also added some grated onion. I just wish these weren't fried in oil. I think I'll try baking them next time. Other than the oil, these came out perfectly and I now have a ton in the freezer for quick snacks.

Southern Peach Cobbler

Amazing Pecan Coffee Cake

I made a bundt version also and it was a huge hit. I took the recs of previous raters: 1.5x the topping, put half in the middle, baked at 325 for 50min and it was perfect. Moist and delicious! I will be making this again and again!

Parmesan Sage Pork Chops

Delicious recipe, but way too much bread crumb mix. I cut it down by 2/3 (I only used 1/4 cup bread crumbs and so on...) and I still had extra after generously coating 2 chops.

Shrimp Scampi ala Norelllaura

Absolutely delicious!! I add a couple handfuls of fresh spinach 5 minutes before it's done and cut down the butter to 1.5 T. Serve over whole wheat pasta with garlic bread and this recipe is to die for!

Banana Nut Muffins
