Peanut Butter Mini Muffins

I thought these were great. They were moist with a nice peanut butter flavor, perfect with a cup of tea or coffee. The basic recipe is identical to the Orange Mini Muffins on this site, just the individuals flavors (P.B, instead of O.J, etc.) are different. If you like this recipe, you might like that one, too. I made both as part of a muffin basket, and everyone loved them.

Easy Cashew Sea Salt Toffee

I've never made toffee in the microwave, so I was a little skeptical that this could be that good. It is THAT good! And it just doesn't get much easier. I also made a variation with hazelnuts (which I needed to use up) and dark chocolate sprinkled with sea salt which was incredibly good. I'd be sure to use a good quality chocolate in this one.

Grandma VanDoren's White Bread

My daughters are devouring this bread while I write the review. We made a loaf for a friend as a thank you today, and they thought it smelled so good, I had to come home and make one for them. We're slathering it in the Cinnamon Honey Butter from this site (modified with 1 extra cup of butter), and it's melting into the warm bread for a little slice of heaven! My Grandma was the breadbaker for the whole family and lots of friends as well, but she passed away without anyone ever getting her recipe. This comes pretty darn close.

Chicken with Pineapple Sauce

We really enjoyed this! I'm always looking for easy, healthy, kid-friendly recipes for busy weeknights, and this fit the bill on all fronts. I ended up using a little larger pan, because the 9" square was kind of a tight squeeze, and I wanted all the chicken to have contact with the sauce as it baked. Also, I was pretty lazy about basting, and it was still moist and lovely. Very good served over rice!

Cranberry Pudding

I keep cranberries in the freezer nearly all year. I thought I'd do a practice run for the holidays with this recipe, and I loved it. I will definitely be making this again then. Moist and sweet/tart, it is a lovely winter dessert. The brown sugar sauce finishes it perfectly. It did take less than 40 minutes to bake, but that could just be my oven. BTW, Janet is right, this is a bread pudding type-dessert, not a creamy pudding.

Amish White Bread

Simple, traditional and lovely! Made two large loaves this afternoon, and it's almost all gone already. This is the kind of bread where you skip making the sandwiches you intended to use it for, slice it warm, slather with butter and eat it right up.

Bow Ties with Sausage, Tomatoes and Cream

The kids wanted pasta, and this was a nice change from their usual request - spaghetti. I had some Chicken Sweet Italian Sausage from the farmer's market store nearby I wanted to use up, plus a box of whole grain bowties. I left out the red pepper flakes because of the kids, but otherwise followed the recipe pretty closely. We really enjoyed this, and it was quick and easy, which is always a plus on busy weeknights.

$2000.00 Pie Crust

Made this for four pies last night, and it really turned out well. The crusts were light and flaky, not tough or heavy, and had a lovely flavor that complemented the chocolate and pumpkin fillings. I added a tad more moisture to it, but I live in the desert and it is dry, dry here, so nothing unusual there. I will use this again and again, I'm sure! Thanks for sharing!

Asparagus Quiche

Very good! Cooked the asparagus and bacon ahead of time, and made the pie shell, then just mixed up the eggs and put it together for quick bunch prep. Great recipe!

Melt-In-Your-Mouth Meat Loaf

I've never been much of a meat loaf fan, so when someone in the family requests it, I always try a different recipe, looking for that perfect one I'll actually enjoy myself. I think I've finally found it. I had Italian-seasoned bread crumbs, so I left out the sage, added a little fresh ground pepper, but otherwise stuck to the recipe. It was nice and moist and flavorful, but simple and classic. I had some organic beef fresh ground at the little corner market, and I know that made it even better, too.

Slow Cooker Chicken Taco Soup

It's so hot here in the summer (108 yesterday) that I try to use my slow cooker on the patio whenever I can to keep from heating up the house. I tried this yesterday with a couple of changes - chicken broth rather than beer and extra diced tomatoes instead of tomato sauce (too hot to drive to the store). Thought it needed a little extra flavor, so added cumin, some fresh chopped cilantro and squeezed a couple of small limes into it at the end. Garnished with sliced green onions and served with warm flour tortillas. Had some extra jalapeno jack cheese, so I set that out, too, and everyone thought it was perfect with the soup. This is pretty healthy, too, if you don't overdo the toppings.
