Smoky Chicken Spread

I made this to add to the New Year's Eve spread last night, and was surprised at how good it was. The smoked almonds add a nice crunch - just using liquid smoke is not going to give you the same effect. Plus, it's very easy to prepare in the mini food processor, which is always great when you're making lots of different dishes.

Peanut Butter Bars I

Went to review these, and was surprised to see that I'd made these before. I had decided that next time I would soak the graham cracker crumbs in the melted butter for a bit first, because I don't care for the little bit of crunchiness they give the peanut butter layer (and I ground them finely in the food processor). Well, I guess I'll try that the third time I make them! Kids really like them, though.

Peach Custard Pie III

We liked this pie, and the fact that it wasn't too bad fat- and calorie-wise for a slice of pie. Sweetness was just right. Used another reviewer's suggestion of brushing the unbaked pie shell with egg - baked crust was perfect, not soggy at all.

Oat Bran Muffins

Used cinnamon applesauce and vanilla yogurt and only one egg. Good muffins and nice source of fiber. Could use a little more flavor, maybe by adding more spices or some dried fruits and nuts.

Johnny's Biscuits

I usually make the J.P.'s Big Daddy Biscuits from this site, but decided to try these tonight to go with a pot of beef stew (my own recipe). I was worried at first because the dough was so wet, but there was nothing to be concerned about. They were fluffy and soft on the inside with just a tiny bit of crispiness on the outside. I thought they were better than J.P.'s! I will be using this recipe from now on.

Classic Thanksgiving Dressing With Parsley, Sage and Thyme

My mother usually makes the dressing for our Thanksgivings, but she was out of town this year, so I tried this one. It's very close to the simple, yet delicious one she makes. It was good, but I had to add more liquid (turkey stock). As is, it was on the dry side. I also thought it needed more sage/seasonings, so I threw in some extra. However, overall, this is an easy, yummy dressy that's great for those of us who are not dressing "experts" like Mom!

Orange Turkey Brine

I thought this was a great brine, and I would use it again. I've brined my turkeys for years now, but I generally use a little more Kosher salt to the amount of liquid (it doesn't make it "salty"), and this turkey was not quite as moist. Next time, I'll just add a little more Kosher salt. Thanks!

Oven Fried Chicken III

Moist and flavorful chicken! I used ranch dressing because I was low on mayo, and I think it probably had more flavor because of that. We liked it a lot.

Pineapple Banana Bread

I thought this was a very good quick bread, and I even changed it to make it a tad healthier! I replaced one of the cups of AP flour with whole wheat, used applesauce for about half of the oil, and reduced the sugar by a 1/2 cup. I had chunk pineapple, so I gave it a quick whirl in the mini-food chopper with the bananas, and it worked well. It was gone very quickly!

Country Apple Dumplings

These were so good! The ingredient list seems improbable, but we were pleasantly surprised with how great they really were. I would probably cut back a little on the sugar next time -- just my personal preference -- but the rest of the family had no complaints. Served warm with a scoop of vanilla ice cream, and they were in heaven. Definitely will make these again. UPDATE: Have made these several times, always cut sugar by 1/4 to 1/2, and even used 3/4 c. butter, still very good - actually, we liked them better!

Garlic Lover's Pizza Crust for the Bread Machine

This was good, not my favorite pizza crust, but still a decent one. My family didn't gobble it up quick like they usually do, so that may have affected my opinion. ;)
