Taco Soup II

My teenagers made this for dinner one night last week, and we all enjoyed it. They made a couple of changes: rather than the green chiles and the stewed tomatoes, they used Rotel tomatoes, and they subbed black beans for the lima beans. They served avocado, sour cream, jack cheese and tortilla chips on the side. This was a quick, easy dinner, and perfect for teens learning to cook.

Big Ben's Beef Machaca

My favorite Mexican restaurant in Phoenix serves great machaca, and I wanted to try to make it at home. This was close, and everyone liked it, except there was a little note of something that just didn't quite work for me. I will definitely make it again, tweaking it a bit to see if I can't fix that. Overall, though, really nice beef, moist and tender. It made great burritos. And this is exactly what machaca is supposed to be - it isn't supposed to taste like ground beef taco filling.

Banana Bread Bars with Brown Butter Frosting

I helped my kids make these for their Super Bowl party. While they were moist and delicious, I thought they were a little too sweet once the frosting was added. Next time, I would use a smaller pan, so the bars would be thicker, and then halve the frosting. They'd be good with just a dusting of powdered sugar, too.

Easy Cashew Sea Salt Toffee

I've never made toffee in the microwave, so I was a little skeptical that this could be that good. It is THAT good! And it just doesn't get much easier. I also made a variation with hazelnuts (which I needed to use up) and dark chocolate sprinkled with sea salt which was incredibly good. I'd be sure to use a good quality chocolate in this one.

Ninety Minute Cinnamon Rolls

I usually make a cinnamon roll recipe that rises overnight in the refrigerator, but in the hustle and bustle this year I forgot to make them. I woke up about 2 hours before the kids and realized I'd goofed. I found this recipe and thought it was worth a shot. I received so many compliments on these - my nieces and nephews argued over the last couple of rolls. They were tender and soft, perfectly cinnamon-y and rose to be light and fluffy. I'm switching recipes permanently!

Classic Goulash

My teen daughter, who is just beginning to cook, made this for dinner last night. We were out of bay leaves (which is extremely unusual) so she left that out, and she reduced the seasoning salt by 1/3 to 2 tsps. She also used a little more ground beef than called for to use up the package. I haven't had this dish for many, many years, but we all enjoyed it, including my two nephews who joined us for dinner. It was kid-friendly, easy comfort food.

Kentucky Biscuits

So easy and so good. I added a little more salt, but otherwise followed the recipe. They rose nicely, were lightly crispy on the bottom and edges, and were pillowy soft on the inside. Really great with homemade blackberry jam!

Easy Oven Brown Rice

I needed a large quantity of brown rice for a few "make ahead and freeze" dishes, and thought I'd try this method. I followed the recipe exactly, and when I pulled the foil back an hour later discovered perfect brown rice - light and fluffy, all the water absorbed, and ready to use. I thought it was much better than stovetop, and even beat my rice cooker. And it doesn't get any simpler than this. Thanks for sharing!

Unbelievably Good Fruit Dip

I really thought I would like this, and we had a huge platter of fruit on skewers for dipping in it, but it was way too sweet for me. I might try it again with less sweetened condensed milk, but I'm not sure if the cream cheese would be too strong in that instance. It could be good, just needs some tweaking for our tastes.

No Bake Peanut Butter Pie

This pie is a wonderful light, cold dessert for a hot afternoon in the dessert. However, it needs to be served straight from the freezer or it will begin to melt quickly. I love just about anything peanut butter and added a bit more than the recipe called for. I made one in a chocolate cookie crust, and we drizzled fudge sauce over it just before eating. Couldn't have been easier to make, and it was gobbled right up!

Beef Fajita Salad

Six teenagers devoured this salad in minutes. I tripled the recipe and included this in a "salad" buffet served at our pool party. I marinated the meat in fajita seasoning, olive oil and lime juice for about 45 minutes before cooking it, and it was incredibly good on the salad (romaine). I had some extra chicken breasts I didn't use for another salad they were intended for, and marinated and cooked those this way as well, and they were just as delicious. Raves all around!

Chinese Chicken Salad III

We included this salad in the food served at our backyard party, our goal being to prepare foods that could be served cold whenever everyone climbed out of the pool and wanted to eat. The dressing was a little too strong for our tastes, but having read the reviews, I also included the lime vinaigrette, with just a drizzle of the hoisin-peanut dressing, and it worked perfectly that way. We would definitely make this again.
