My step daughter needed a Latin recipe to take into her Spanish class for extra credit so I found these. I made a batch 2 nights ago to try them out and they turned out PERFECT!!! They were so yummy!! I am making a second batch right now for her to actually take to school for their Xmas party tomorrow. So far they are cooking up great, will try to post a picture of them when they're done. We halved the batch and added red and green food coloring for a holiday touch.

Easy OREO Truffles

These were fun to make! Made me feel like a little kid again as I had chocolate all over the place. They turned out delicious and I can't wait to share them with my co-workers tomorrow at our Secret Santa reveal party. Hubby and my son wanted to eat them all and I had to force them out of the kitchen.

Chicken and Red Wine Sauce

This one has been a huge hit both at home and at BBQs. I've even had to forward the recipe on to friends. Giving it 5 stars because my husband is constantly asking me to make this now. Thanks for such a wonderful, easy recipe.

Strawberry Trifle

This was last nights dessert and it turned out great. I did modifiy it a bit, but went along the same lines as the original. I used dessert bowls to make them individuals. I used SF cheesecake flavored pudding, 1% milk and Lite whipped topping. My husband and son kept saying how great it was. It was a very nice change to our usual cake or ice cream desserts.

Cajun Baked Catfish

Wish I could give it more than 5 stars. I made this for myself last night because the family wanted fried catfish. I'm trying to change my diet so I opted out of the fried. I was very skeptical because I've only tried baked fish a few times in my life and I hated it. From the first bite, I loved this. I will now be making this a staple of mine. It's quick, easy and sooo good for you. Thanks.

Bev's Orange Chicken

Made this last night for dinner with vegetable soba. The whole family loved it. I did take some of the others suggestions and used OJ concentrate over just juice. I actually allowed it to marinate for about 2 hours, then basted with the marinade. Last 5 minutes I broiled the thighs on high. Will def be keeping this recipe and can't wait to try it on the grill.

Barbeque Beef Casserole

This was quick, easy and very tasty. I was able to zap the leftover shredded BBQ from our dinner the night before so it made it that much quicker. Only changes I made was to add a can of rinsed black beans. Very hearty, the whole family loved it. Will add to our dinner rotation. Thanks.

Slow Cooker Barbeque

This was fantastic, my son and husband couldn't get enough of it. I used a 5-6lb cheap roast that I'd bought several weeks ago. I made as recipe directed, but did take the advice to drain to the crockpot in the last hour of all the grease and add a bit more BBQ sauce to the shredded meat, cooked for another hour and it turned out wonderful. This made so much yummy beef, hubby's having it for lunch today as am I and I'm making a casserole for dinner out of the rest. Thanks!!

Crabmeat and Corn Soup

I made this recipe almost exactly as written, using fresh Chesapeake crabs that we had left over from last night. I did substituted the half and half for heavy whipping cream and we used Old Bay to season. All I can say is OMG. I've never tried any recipes using crab meat other than just boiling crabs, but this will become a regular on our menu while the fresh crabs are available. Even my 8 year old loved it.

Peachy Pork Chops

I don't know what else to say about this except...it's wonderful!! I decided to try it only after being tired of regular baked, fried, and grilled pork chops. My 5 year old and husband said that it's a keeper. We had this served with white rice and garlic green beans. Fantastic!!
