Lamb and Winter Vegetable Stew

This is so good -- we've had it twice in the last week because it's so good and I bought enough veggies to make two batches. I had to use beef instead of lamb, but it was still great. I substituted acorn sqaush for butternut b/c our grocery store only had monster-sized butternuts. My only recommendation is to increase the salt, pepper, and garlic. I probably doubled all three. I'm disappointed we found this receipe so late in the winter b/c I know I'll be craving it this summer.

Brown Rice and Black Bean Casserole

I was skeptical at first, but this was really good! I used cheddar cheese instead of swiss and pinto beans instead of black beans. Next time, I'll increase the amount of veggies.

Cherry Chicken Lettuce Wraps

Great recipe -- even better as leftovers the next day. We used canned cherries because fresh were out of season and it gave the chicken mixture a weird red tint (especially the leftovers). Next time, we'll try craisins or dried cherries like others have suggested.

Chicken or Turkey Tetrazzini Deluxe

Great way to use up leftover turkey! I halved the recipe and it filled an 8" X 8" baking dish. To cut down on fat, I used reduced-fat cheese and soup, and sauteed the onions, etc. in olive oil instead of butter. Like others suggested, I halved the water but will omit it entirely next time. I recommend red bell pepper instead of green for flavor and color.
