Easy Mashed Potato and Roasted Vegetable Enchiladas
Excellent dish! I come from a mexican-american home where enchiladas make a weekly (if not more) appearance on the menu. I love all varieties of enchiladas but this one is close to the top of the list. Hubby says its his favorite. I loved the use of mashed potatoes as the base instead of some can of soup like a lot of recipes call for. I think I might even try that with my chicken enchiladas. Do yourself a favor, though, and make the mashed potatoes from scratch. No Flakes, No Way!!! That is my all-time pet peeve. :)

Slow Cooker Buffalo Chicken Sandwiches
Oh my heavens....yummm! I was nervous with some of the negative reviews as I did not have a backup plan for dinner. I did switch some things up based on some of the reviews and my instinct. I put the chicken (fresh not frozen) in the crockpot in 2 cups chicken broth for 4 hours. I drained and shredded the chicken and returned it to the pot with 8 oz of wing sauce for another hour and half or so. It was perfect! Not to hot, not too wet, not at all vinegary. If you like wings you would love this. I served it on a roll with extra wing sauce at the table, blue cheese dressing and a salad on the side. It felt like a reasonable healthy indulgence.

Homemade Black Bean Veggie Burgers
VERY tasty but fell apart. I am going to play with it a bit and see if I can get a firmer texture but it was delicious anyway.
