Quinoa and Black Beans

I was a bit leery of how much I would like this since quinoa can be sour-tasting, but it was DELICIOUS! I wish I had doubled the recipe and frozen half for the next week too - definitely do it! It was great with avocado slices and tortilla strips! Also, add a red bell pepper or roma tomato wedges if you have - lovely!

Pork Cabbage Saute

Quick. Simple. Tasty! I only had ground pork on hand for this, but it still worked great. I served it over some brown rice pasta spirals, and threw in some thinly sliced green apple chunks for some contrast. I think it would pair well with a dollop of sour cream on top, but I didn't have any on hand. Enjoy!

Apple Gouda Quesadillas

As someone who is gluten-free, I used corn tortillas instead. Instead of green onions, I mixed a drizzle of maple syrup into the mustard and spread on with the back of the spoon first. Then I layered cooked turkey bacon, thin apple slices and some shredded gouda on top. Sandwiched between two corn tortillas, heated in a hot cast iron pan over medium heat til cheese was melted - DELICIOUS! Cut into 4 slices to serve and garnish with remaining apple slices and some parsley or other green.

Pasta with Chicken Mushroom Cream Sauce

This wouldn't have been as good if I hadn't made some modifications. I mixed others suggestions with my own ideas, since I'm feeding a 20 mos old with this. He loved it! I added frozen peas, minced garlic, fresh basil, and some grated Parmesan, and some diced tomatoes that I threw on top after it was on the plate. Delicious! (Note: I used frozen shitake mushrooms that were presliced). This was quite fast for the flavor! I wish I would have made more for leftovers!
