Black Bean Brownies

Reviewed: Nov. 12, 2010
I'm still getting used to the texture and taste. These are pretty good. Don't expect a normal brownie. They are healthier, though.

I used about 5 small-to-medium bananas. Great flavor and texture. This works well for muffins.

Chocolate Peanut Butter Cups

Reviewed: Dec. 19, 2010
These are good with the changes I made. I used Almond Bark and about 1/2 cup of creamy peanut butter for the shell. I didn't use salt and added a tsp of vanilla to the peanut butter mixture for the filling. I also didn't see a need to trim down the cups as they come out perfectly. Also, if you put them in the freezer for 10 minutes, they will be set. Fast and easy recipe.

Cream Cheese Squares

Reviewed: Dec. 24, 2010
I just made this last night for our Christmas dinner! Very easy! I used cinnamon, sugar, and pumpkin pie spice on the bottom layer as well as the top. I also drizzled caramel and homemade chocolate sauce on the top. Even better the next day.

I didn't have lemon juice so I used vinegar. I also added a little bit of coffee to the bananas and reduced the sugar.

Spinach Ziti

Reviewed: Jan. 19, 2011
I didn't use nutmeg or crushed red pepper. Instead, I used a few drops of Frank's hot sauce. The only tomatoes I had were Rotel. It probably won't wow anyone, but it is an easy meal to prepare during the week. I think I will try it again when I have better ingredients on hand.

It was good as-is, but I wanted to add cinnamon and vanilla. I liked it a lot more that way. I also used almond milk.

I added a lot of things to this recipe. I really loved these once I added hot peppers, onion, dry ranch dressing mix, and a little dijon mustard.

Peanut Butter Cream Parfaits

Reviewed: Jan. 24, 2011
I tried to make it "lighter" by using the free version of whipped cream and sugar-free Reese's. I also used a small amount of milk chocolate chips. Great.
