Simple Baked Apples

These were easy and delicious! I left the nuts out because I knew the kids would complain, but it would definitely be good with nuts.

This recipe is heaven. If you have an apple peeler/slicer, it is so incredibly easy to make better applesauce than you can buy in any store!

Cajun Fish Seasoning

This is excellent. I prefer to cook fish on the grill, but otherwise, I did everything exactly as the recipe says. The spice mix makes lots. I saved the extra in a spice container. Now it's ready to go any time I want to make this dish. I've tried it both with snapper and amberjack and both are wonderful. The key is being quite generous with the seasoning.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Wow! First, the sauce. I made it up the night before, following the recipe exactly. To be honest, I didn't like the way it smelled at all, but figured all those 5 stars ratings couldn't be wrong. I kept the faith. Next, the ribs. One tip, put something down in the bottom of your oven to catch drips. They made a mess, even though I folded the foil and placed the ribs with the seal facing up. Oh, well no big deal. Then, the transfer from the oven to the grill. This was a little tricky as the meat just kept falling off the bones! We decided to grill them on foil, because if we hadn't, all the meat would have fallen into the fire. We used no stick foil, but we still had some "stickage." They were still quite juicy and generated a lot of smoke as their juices drained into the fire. Finally, we got them on the table to eat and...WOW! Amazing and worth every bit of the mess. Before we tasted them my husband was pretty annoyed with the mess on the grill. After one bite, though, he decided the mess wasn't really all that bad. Kind of like how you forget labor pains when you first hold that precious baby! Excellent recipe with just the right amount of "bite." If you do not like spicy food, cut back the red pepper a little.

Beef Tenderloin With Roasted Shallots

I made this for Christmas dinner and it was absolutely delicious. I was very torn about whether or not to put the sauce in the blender, as there were so many people who recommended each way. I decided to make it exactly as the recipe says and I was not sorry. I am sure, though, that the sauce would be wonderful blended, as well. I don't think you can really mess up something so fundamentally good. Thanks for sharing!

Pumpkin Pie Spice I

This is hard to rate, because you can't really comment on the taste of the spice alone. I love having the recipe, though, so I can make my own pumpkin pie spice when I need it. So far, anything I've made with it has been wonderful.

Cinnamon Coffee Cake II

I made this for my office and everyone raved. There were no leftovers. I made it exactly as the recipe says, except I used french vanilla instead of regular pudding because that was all I could find. I also did what one other reviewer did and made the cinnamon/sugar mix with pecans in only half, so those that don't like/can't eat nuts could still enjoy the cake. It was terrific and I can't wait to make it again.

Laura's Quick Slow Cooker Turkey Chili

I have come to rely on Boilermaker Tailgate Chili (from this site), which I make with turkey, as my go to chili to get rave reviews from those I am feeding. However, I came across this easy slow cooker recipe and decided to give it a try for a less labor intensive meal. It was actually excellent. I took cues from other reviewers and used 1 can tomato soup and 1 can Rotel tomatoes, as well as a can of chopped green chilies. I also added 1/2 can of water. I used 1 can kidney beans, 1 can pinto beans and 1 can black beans. My only complaint doing it this way was there was not enough liquid. Next time, I will probably use 2 cans tomato soup and 1 can Rotel tomatoes. My son complained that it had too many beans, but he is not a bean fan. I thought this was a great, easy chili recipe.

Baked Pineapple Casserole

Just made this with the marinated pork tenderloin as so many others suggested. Amazing! I used a whole loaf of French bread and baked it maybe 45-50 minutes. I had to watch it closely and covered it toward the end so the bread did not burn. Delicious!

Cajun Style Blackened Snapper

Used this recipe with amberjack (thought I had snapper on hand but was wrong). I didn't want the mess/smell in the kitchen, so we grilled it. For those who thought this was not flavorful enough, I wonder if they did not coat with the herb/spice mixture enough. I smothered the fillets in the spices, then we made a little tray out of foil for the grill and did just like the instructions say for the skillet. This was absolutely KILLER! Extremely flavorful and just the right combination of spices. Thank you for the recipe!

Braised Balsamic Chicken

I made this last night at the last minute after arriving home with no plan for dinner. It was super easy, tasted wonderful and is healthy. What more can you ask for in a recipe. I made it exactly as directed, except I used the diced tomatoes already seasoned with basil, oregano and garlic, because that's all I had in the pantry. I still added the spices as the recipe says and it definitely was not too much. It was delicious and will be made many times again in my house. It is also very pretty and could easily be served to company.

Janet's Rich Banana Bread

This is absolutely delicious and disappeared in less than 48 hours. Everyone was upset when they realized it was all gone already! The only comment I have is that I had to bake it for over 70 minutes and it still was not quite as done as it should have been. My oven is usually pretty accurate, too. Anyway, this is my new staple banana bread. Thanks for sharing!

Never Enough Green Bean Casserole

This was the best green bean casserole I've ever made. Definitely better than the old standard on the side of the can of french fried onions! I did use fresh mushrooms and real bacon and I think it was the right thing to do.
