Alternative Baked Salmon

I made this last night and my family ate every bite. I thought it was a little too rich, but a little fresh lemon squeezed over the top after cooking probably would have helped that. It is super easy and I'll definitely make it again.

Ranch Burgers

These were suprisingly good. My kids even commented about what a great burger it was. I served them on fresh baked hamburger buns from Publix bakery, sauteed mushrooms and onions, muenster cheese and fresh tomato slices. My family called them "gourmet burgers."

Broiled Tilapia Parmesan

This was okay. The kids liked it, my husband and I did not. I used amberjack instead of tilapia, and it was really too thick. The recipe would probably be better with a thinner, less meaty fish. Very easy, though.

World's Best Lasagna

This was my first attempt at making lasanga and I thought it was great. My husband thought it was good, but wasn't super impressed. I will definitely make again though. *Updated rating/review* As I recall, the first time I made this I could not find the right kind of sausage. The second time I made it I was able to find the right kind and it was absolutely delicious. I can't wait to make it again!

Brown Rice and Black Bean Casserole

This recipe is very unique and my husband and I loved it. It's kind of unusual on the first bite or two, but really grows on you after that. I would say it is probably not for everyone, though as it has a very distinctive blend of flavors. After reading the reviews, I did leave out the carrots. It is a fair amount of work, but worth it if you aren't in a hurry or can make it up ahead of time.

I used this recipe the first time I ever made chili and was so pleased with the results. This is a terrific "standard" chili recipe with very predictable results. I will use it for years to come.

Hot Artichoke Dip with Green Chiles

I've been making this recipe for years and it is always a hit, wherever I take it. You can keep all the main ingredients in your pantry and make it in a moment's notice. Perfect for unexpected get-togethers. I serve it with cocktail bread or slice baguette.

Cowboy Oatmeal Cookies

These cookies were very good and very easy to make. I added about 3/4 c. chopped pecans, 1 tsp. vanilla, and probably an extra 1/2 to 1 c. butterscotch chips. The cookies were delicious, but a little too sweet for me. Next time I will make it with chocolate chips, instead, and not add any extra. Overall, a great cookie!

Irish Cream Bundt Cake

This cake is killer! It's a bit messy and time-intensive as you pour the glaze over at the end, but well worth the trouble. I've made it several times and I do think it helps to poke holes into the cake to allow the glaze to soak in.

Grilled Portobello Mushrooms

These were excellent! I also added a splash of balsamic vinegar as mentioned by others and I definitely think it added to the flavor. Will make again. Next time I think I will use just a little less salt, but overall, they were great.

I made this and added some finely chopped celery and Cavender's greek seasoning as recommended by another reviewer. I was concerned how it was going to go over with my husband and kids, but everyone said it was great and voted it a keeper.

My family loves this! To me, it is good, but not the ultimate banana pudding recipe I'm still looking for. However, given it's ease and how much everyone raves, it is a wonderful recipe and will be made again and again in my house.
