Fruity Curry Chicken Salad

This is the first time I have ever made chicken salad and am very pleased with the results. I used 2 cans of canned chicken. I didn't have any golden raisins, so I used Craisins as others and it was delicious. I will definitely make this again.

Quinoa Tabbouleh

This recipe has potential, but is kind of boring as is. It is very refreshing and a nice summer salad, but I agree with others who felt it was missing something. I could definitely imagine it with cilantro and/or cumin. I would have given it 4 stars, but my husband, who likes everything, really did not care for it.

Quinoa and Black Beans

I actually thought this was very good, but no one else in my family cared for it. 5/10/10: I upgraded my rating to 4 stars. I took this to work for lunch everyday for a week and it is delicious. So what if my husband and children don't like it. I think it is excellent and will make it for myself again. It keeps and reheats very well. 4/1/12: I've upgraded to 5 stars. I don't care that my family won't eat it. It's delicious and healthy. A perfect dish in my mind!!

Simple Turkey Chili

I wanted to try turkey chili as a healthier alternative for the traditional version. I will probably never make beef chili again, however this was not, on the whole, the most flavorful chili recipe I've ever made. I will probably try using turkey in one of the other turkey recipes from this site in the future -- though this really was very good. UPDATE: I changed my rating to 5 stars after eating this on the second day...definitely more flavorful!

Slow Cooker Turkey Breast

This is a great recipe and a wonderful revelation that turkey can be done safely in a slow cooker. I was nervous that it would not get thoroughly cooked, so I cooked it a little longer than the recipe says. Mine was actually a little dry, but I assume full responsibility for that. I will definitely make this again and again in the future for how easy and healthy it is.

Easy Morning Glory Muffins

These are delicious. Shredding the carrots is the most time consuming part. Otherwise, pretty straightforward. I did as others suggested and used 1/4 c. oil and 3/4 c. unsweetened applesauce. I also used whole wheat flour. I know I should try the recipe as originally written first, but I was afraid I might like the less healthy version better. I figure if I try it the healthier way and like it, I'll never know what I'm missing! I think you could easily cut the sugar back to 1 c. and never miss it. Anyway, these are great! Not low-cal, but full of good stuff!

Rosemary Roasted Turkey

This was absolutely wonderful. My only complaint is that I had a really hard time getting the rub to stick to the turkey. No one else has mentioned it, so maybe it was something I did wrong. Anyway, in the end, it was exceptional. I cannot wait to make it again!

Cajun Red Snapper

This is excellent. I prefer to cook fish on the grill, but otherwise, I did everything exactly as the recipe says. The spice mix makes lots. I saved the extra in a spice container. Now it's ready to go any time I want to make this dish. I've tried it both with snapper and amberjack and both are wonderful. The key is being quite generous with the seasoning.

Tortellini Soup I

When I first made this, I was a little leary, because I wasn't sure my family (especially the kids) would like it given the ingredients. I made it exactly as the recipe stated and it was actually wonderful. The only reason I'm giving it 4 stars is because it was actually pretty greasy. If I could find a lower fat sausage or a turkey sausage, I think I might like it better. I cut up the veggies the night before, so when I got home from work all I had to do was brown the sausage and throw everything else together and let it simmer.

I just made these and they taste great. I cannot stress enough how right the reviewer was that said it is important to make sure your peanut butter balls are VERY cold and your chocolate VERY hot. It makes all the difference in the world in ease and appearance. Also, I did half of mine with a double boiler and half with my "Little Dipper" mini crock-pot --WOW!! I will be using the Little Dipper for all my future chocolate dipping needs! It is perfect for the job!

Cajun Style Blackened Snapper

Used this recipe with amberjack (thought I had snapper on hand but was wrong). I didn't want the mess/smell in the kitchen, so we grilled it. For those who thought this was not flavorful enough, I wonder if they did not coat with the herb/spice mixture enough. I smothered the fillets in the spices, then we made a little tray out of foil for the grill and did just like the instructions say for the skillet. This was absolutely KILLER! Extremely flavorful and just the right combination of spices. Thank you for the recipe!

Five Flavor Pound Cake I

This is a delicious cake. The only thing I changed was substituting almond extract for rum, since I am not a big fan of rum cake. I can't wait for an excuse to make this cake again.

Overnight Blueberry French Toast

This was delicious. Very rich, of course, so it will feed a lot of people. The sauce is delicious. I made a double batch as some suggested, but had way more than was needed. Next time I will not double the sauce.
