Mexican Bean Salad

Delicious. I cut the salt in half (or less) and use less sugar and it is still wonderful. The only downside is my family will not eat it (they have an aversion to beans), so I end up eating it all.

Garbanzo Bean Chocolate Cake (Gluten Free!)

I made this exactly as written and it was okay. However, the recipe should say to grease AND FLOUR (or dust with cocoa powder). Mine stuck to the pan and it's presentation leaves a little to be desired. And it was very grainy/gritty. I'm not sure why, though my food processor is very old and very cheap. Perhaps a better food processor would yield a better texture.

Laura's Quick Slow Cooker Turkey Chili

I have come to rely on Boilermaker Tailgate Chili (from this site), which I make with turkey, as my go to chili to get rave reviews from those I am feeding. However, I came across this easy slow cooker recipe and decided to give it a try for a less labor intensive meal. It was actually excellent. I took cues from other reviewers and used 1 can tomato soup and 1 can Rotel tomatoes, as well as a can of chopped green chilies. I also added 1/2 can of water. I used 1 can kidney beans, 1 can pinto beans and 1 can black beans. My only complaint doing it this way was there was not enough liquid. Next time, I will probably use 2 cans tomato soup and 1 can Rotel tomatoes. My son complained that it had too many beans, but he is not a bean fan. I thought this was a great, easy chili recipe.

Delicious Black Bean Burritos

This was a very good, quick meal. I did make some changes based on other reviews and there are things I will definitely do different next time. I added packaged Southwestern flavored chicken, which was good, but homemade shredded chicken with fajita seasoning would be better. The prepackaged was a time-saver, though. I also added some cumin, Rotel tomatoes and shredded cheddar. I did not drain the tomatoes, but will next time, as it was too soupy. It probably would have been okay with more beans and/or chicken, but I was only feeding 2. Anyway, this was very easy and tasty.

Mediterranean Quinoa Salad

I used yellow onion, instead of red, because that is what I had on hand and red onion is always a bit strong for my taste. Initially, I made this without the chicken and even adding only half the dressing, it was way too soupy. I then added some chicken, hoping to help the consistency. My husband and I liked it (my daughter ate several bites and my son would not try it), but a little goes a long way. Next time, I will try using red onion and few less olives. I will also add the dressing a bit more gradually to avoid the soupiness.
