Roast Sticky Chicken-Rotisserie Style

Incredible ease and flavor. I didn't marinate with the rub. I just put the dry rub on the chicken and popped it in the oven. Wonderful!

Fresh Southern Peach Cobbler

Scrumptious. To lighten it up slightly, I only used the white sugar (1/4 C) in the peach mixture, and in the flour mixture, I used white whole wheat flour (yay-fiber!) and cut the white sugar in half. Thanks for a very good recipe! I thought the topping was enough for 8 peaches; I baked it in a 9-inch square pan.

Peach Muffins

So good. I actually made half the recipe and still got 12 muffins, using two eggs and white whole wheat flour. The batter is stiff until you stir in the peaches.

Salsafied Chicken and Rice

Easy; delicious; doesn't need the added salt on the chicken. I used instant brown rice and kept the pan on low while it cooked; I also added black beans. Served with unsalted taco chips and corn bread. I made this again, one week later. This time, I sauteed onion and green peppers, added white beans,pineapple chunks, and a pinch of cayenne, and used a peach-pineapple salsa. Delicious!

Thai-Style Peanut Sauce with Honey

Delicious. I subbed 1/8 tsp. ground ginger and used the sauce with one pound of whole wheat linguine, and sauteed shallots, snap peas, mushrooms, and grated carrots. Great flavor. Next time, I would double the sauce.

Fish Tacos

This was delicious. It was the first time I battered and fried something; it was slightly messy but not too difficult. I added a splash more beer to the batter to get a slightly thinner consistency; it was very thick. I don't have a fryer, so I heated an inch of vegetable oil in a heavy duty pot on medium high. I swirled the oil in the pan a bit, so it would cover the fish fillet while the one side was fru=ying about two minutes, and then turned the fish over with a spatula to cook the other side for two minutes. Both sides should be a nice golden light brown. The batter was light and crispy. The sauce is so tasty and I didn't make it ahead. I omitted the jalapeno and capersand used 1/8 t. cayenne. I thought the sauce was enough for one pound of fish. Will certainly make again.

Mexican Baked Fish

Very good and super fast to make. I would have some extra chips next time to sprinkle on top at the dinner table. The chips that baked on the fish were crunchy at first and then began to get soft. The crunch added a nice contrast.

Salmon Chowder

Fast, easy, delicious. Modifications: I replaced the evaporated milk with skim milk, and the dried dill with two teaspoons of fresh dill. I also used 1 and 1/2# of wild caught salmon, two cloves of garlic, kernels from 1 ear of corn, reduced-fat cheddar, and 32 oz of chicken stock.

Bacon Cheddar Chive Muffins

Delicious. These will be great to make ahead and freeze throughout the school year. My modifications: I used 1C whole wheat and 1C white flour, 1 t. garlic powder, 1/4 C fresh chopped chives, 1.5C extra sharp cheddar, and 1/2C Greek yogurt (instead of mushroom soup).

Southern Butternut Squash

This is SO delicious. Adjust to your taste. I used 1 C milk instead of the condensed milk and cream. Omitted butter. Used 1/2 C brown sugar instead of 1 C white sugar. Also tried it with 1/2 C milk and 1/2 C plain yogurt. I have made it with and without topping - both are good. Once, I also added three eggs and left in the oven too long and ended up with a delicious squash cake! I make this at least once a week!

Mondi's Super Simple Chicken

I made this with boneless chicken breasts smothered in herbed butter (softened butter mixed with dried basil and thyme). One hour in 350 oven, covered in foil. Amazingly moist and full of flavor. Have to try it to believe it. Superb.

High Temperature Eye-of-Round Roast

Very good - you have to try it to believe it. I preheated the oven at 500 for half an hour. I had a 3-pound roast and cooked it at 500 for 20 minutes (forgetting to lower the temp to 475), and then turned off the oven and let it sit for 2-1/2 hours. I used garlic salt, pepper, and thyme as a rub before cooking. Result: nice flavors and a tender roast done to perfection (a bit pink in the center).

Oatmeal and Wheat Flour Blueberry Pancakes

Wow. These are excellent. I made half the recipe and got 15 small/medium pancakes. I only had regular oatmeal so I ground it (3/4 C of oats) into flour in the food processor. I replaced the oil with applesauce and for the liquid, I used 1/2 C kefir and 1/2 C low fat milk. I also added a 1/2 teaspoon vanilla. I made half the batch with fresh blueberries and half with mini chocolate chips. Next time, I'll make the whole recipe and freeze the leftovers.

Delicious Salmon Pasta Salad

This was very, very good. I was looking for something to make with a can of salmon and pasta and this was perfect. I didn't have broccoli so I sautéed a zucchini instead; I also added a chopped tomato and half a can of chick peas and a bit of chopped onion. I couldn't believe that a cup of olive oil wouldn't be too much so I only used a half but I think next time I will try a cup. This made a huge bowl of pasta salad and the dressing was readily absorbed. It was still good though with half the oil so suit yourself. Nice with a good grated cheese on top. This is a very flexible recipe. Thanks!
