Rhubarb Sauce II

I made this exactly as written; perfect sweet-tart blend. Used a mandolin to slice it thin, but may just rough chop it next time.

Basic Crepes

Mix the eggs & wet ingredients together, then sift in the flour and you will get ridiculously easy, "magically delicious" crepes. This was the first time I made them and, oh my goodness, they came out great. A 1/4 cup makes a small sized crepe. Tilt the pan right away since they start cooking immediately. I set my electric griddle at 325 degrees. Served these with Rhubarb Sauce II on this site. Outstanding.

Blueberry Waffles with Fast Blueberry Sauce

Delicious. Not sure what all the comments about bland waffles is about. I am rating the waffles only; I used the blueberry breakfast sauce recipe for the syrup. I used white-whole wheat flour and a bit more milk (another 1/3 C?). Also used 1 C blueberries. The batter made six waffles.

Spinach Cheese Pie

This was good, but wouldn't really call it a quiche. You really must enjoy ricotta cheese to like this pie. Next time I make it, I will add some shredded cheddar rather than the parm. Warmed marinara sauce makes a nice garnish when serving.

Spanish Rice Bake

Delicious; will make again. Took an hour to simmer though, to cook the rice, so next time I would add cooked rice. Also added leftover corn and fresh sliced mushrooms. along with a little chicken broth.

Mushroom Pork Tenderloin

Fantastic 30-minute meal. Baked potatoes in the microwave and applesauce on the side - perfect. I added about half a cup chicken stock to the pot to give it more sauce while simmering along with half a sliced onion, and doubled the mushrooms. Delicious.

Almond-Topped Fish

Outstanding - I used cod. I had fresh basil instead of parsley and it was delicious. The onions cooked to perfection under the fillets. I made the recipe with three half-pound fillets. Next time I will double sauce; it is delicious. Be sure to use the toasted sliced almonds. The added texture is perfect.

Southern Peach Cobbler

Scrumptious. To lighten it up slightly, I only used the white sugar (1/4 C) in the peach mixture, and in the flour mixture, I used white whole wheat flour (yay-fiber!) and cut the white sugar in half. Thanks for a very good recipe! I thought the topping was enough for 8 peaches; I baked it in a 9-inch square pan.

So good. I actually made half the recipe and still got 12 muffins, using two eggs and white whole wheat flour. The batter is stiff until you stir in the peaches.

Salsafied Chicken and Rice

Easy; delicious; doesn't need the added salt on the chicken. I used instant brown rice and kept the pan on low while it cooked; I also added black beans. Served with unsalted taco chips and corn bread. I made this again, one week later. This time, I sauteed onion and green peppers, added white beans,pineapple chunks, and a pinch of cayenne, and used a peach-pineapple salsa. Delicious!
