Fresh Strawberry Upside Down Cake

Wonderful! I add about a cup extra of mini marshmallows, cut the cake in half and stack it to make a "layer" cake, then spread whipped cream around the sides. We've made this four times over the past month, and people have raved about it every time.

Boilermaker Tailgate Chili

MightyPurdue22, PLease Forgive me for I have sinned...I took this wonderful chili and turned into a vegetarian recipe! It was so great the first time as written, my wife (who is not as enamored with meat as I am) asked if I would leave out the meat and substitute zucchini and more bell pepper. It hurt just to think about it, but guess what? It really is good this way. So if you are looking for a FABULOUS vegetarian chili, just leave out the meat and put in whatever veggies you like. Again, my apologies for this sacrilegious variation.

Citrus Grilled Turkey Breast

This is very good, it gives a different twist on Turkey. Although it has a nice citrus flavor even without the gravy, it is the citrus gravy that puts it over the top. For other novices out there, DO NOT cook the breast to the 185 degrees most thermometers show for poultry or it will dry out. I cooked it to 180 (I was a little leery of 170) and it was perfect.

Shrimp and Okra Gumbo

Used 3 Cups water, 3 cups clam juice, 3 tbsp Old Bay, 1 tsp basil, 1 tsp oregano, 1 tsp thyme, added 1/2 lb scallops and this was fantastic. When I make it again, will probably cook the okra a little less. Expensive to make, and absolutely worth it!!

Simple Chicken Brine

I also had complaints that it was too salty. I don't know if cutting back on the salt would help or not since soy sauce has such a high sodium content. Sorry, not a keeper for me.

Catherine's Spicy Chicken Soup

I got very lazy and just threw all the ingredients into a crock pot and let it cook all day. I even used frozen chicken breasts and cut them up after being in the pot for a couple of hours. It came out so good I have to wonder if the original cooking recipe is any better! Doing this is as easy as it gets!

Easy Pot Roast

By accident, I learned the secret...cook at a low heat for a long time. I cooked a 2-1/2 lb pot roast at 290 degrees for over 3 hours because I got tied up in a meeting. I thought it would be burned to a crisp as I only planned on cooking it 1.5 hours. Also left out the worcestershire and added a can of cream of mushroom soup. IT WAS FABULOUS!

Praline Strips

Really, Really good! However a note...used all butter and made two separate batches (did Not cook at the same time), one in a glass pan and one in a metal one. Per other reviewer suggestions, increased the cooking time to 18 minutes. The glass pan was fabulous, the metal pan burned to a crisp! I didn't know glass vs. metal would cook differently, but a good lesson! Also, substituted walnuts for the pecans (1/2 the price) and nobody knew the difference! They were the only dessert to disappear.

Turkey Brine

What a pain to bathe a 25 pound turkey in a 5 gallon bucket, but ABSOLUTELY WORTH IT!!! We had 15 people and they raved about the turkey being the best they ever had. Even the white meat was moist and juicy. This was my first time brining, but will now do it for whole chicken, turkey, and anything else I can think of!

Goldy's Special Salad

Really great presentation! Left out the avocado, and my wife vetoed the dressing after tasting it. We used a bottled light raspberry vinegarette instead. I was concerned it might be too sweet, but the salad got raves.

Tex-Mex Turkey Soup

My family thought this was excellent, not to spicy but had some zest. We wanted more vegetables so I used frozen mixed veggies instead of just corn, and did not add sour cream during cooking. Perfect to use leftover turkey on a cold autumn day.

Banana Upside-Down Cake

Very delicious and not overly sweet; has a very good balance. I also could not find banana cake mix, so I sprinkled banana creme instant gelatin on top of the bananas and used yellow cake mix. Worked very well.

Slow Cooker Vegetable Chili

I've been looking for a good veggie chili recipe and this is it! A little too much chili powder for my taste, made it seem unbalanced. I'll cut back and add more oregano and cumin next time and see if it will even out, but all in all, very good and very easy since there is no additional cooking of the veggies. Thank you!
