Tex-Mex Turkey Soup

My family thought this was excellent, not to spicy but had some zest. We wanted more vegetables so I used frozen mixed veggies instead of just corn, and did not add sour cream during cooking. Perfect to use leftover turkey on a cold autumn day.

Creamy Dill Cucumber Toasties

This really is very tasty, very attractive, and VERY easy. Per another's suggestion, I used cherry tomato slices in addition to cucumber slices. I do think I will try Melba Toast rounds next time to give some crunch.

Citrus Grilled Turkey Breast

This is very good, it gives a different twist on Turkey. Although it has a nice citrus flavor even without the gravy, it is the citrus gravy that puts it over the top. For other novices out there, DO NOT cook the breast to the 185 degrees most thermometers show for poultry or it will dry out. I cooked it to 180 (I was a little leery of 170) and it was perfect.

This is pretty good but very, very rich...1/2 of my guests liked it, the other 1/2 thought it was only OK. I'd be tempted to try something in place of the butter (olive oil?), except this is too expensive of a recipe to experiment with.

Shrimp and Okra Gumbo

Used 3 Cups water, 3 cups clam juice, 3 tbsp Old Bay, 1 tsp basil, 1 tsp oregano, 1 tsp thyme, added 1/2 lb scallops and this was fantastic. When I make it again, will probably cook the okra a little less. Expensive to make, and absolutely worth it!!

Microwave Peanut Brittle

I made this several years ago and only gave it 3 stars because it turned out too chewy. Just made it again but followed another reviewers recommendation to change the cooking times to 3.5 minutes, 3 minutes and 1 minute, respectively. It turned out absolutely perfect in my 1000 watt microwave oven. This will now be a permanent addition to our candy recipe box!
